Sweet Chili-Ponzu Catfish

Subscription boxes are all the rage these days. You can have just about anything sent to your doorstep, and I think it is wonderful. I have tried just about every subscription box I have seen on the internet, and so far I have to say, Blue Apron is my favorite.

As much as I love beauty boxes, clothing fixes, and subscriptions just for my dogs. I love a subscription that will send me everything I need to fix a delicious meal for my family. They have really taken all the hard work out of family dinners!

For those who are not familiar with Blue Apron, they offer a subscription that ships you sustainable food, along with a recipe card so you have everything you need to put a wholesome dinner on the table, in under 30 minutes. I am someone who does a lot of cooking, so at first I was sort of skeptical. I quickly realized how convenient it was, and how delicious all the recipes were.

When I got started, I was given options of several meals to pick, all were seasonal and right up my ally. It was very hard to narrow it down to just two meals my first week. They had everything from chicken, fish, beef, and even vegetarian options. There was something there for the pickiest of eaters.

This Sweet Chili-Ponzu Catfish with Green Beans and Coconut Zucchini Rice was the first meal we tried. It was on the table in under 20 minutes, and it was scrumptious. If it were not for Blue Apron, I can’t say that I would have ever made a dish like this for my family. Catfish is not something we typically eat in my part of the country. So it was fun trying something new!

The catfish was quick to make, packed with flavor, and paired so well with the coconut zucchini rice. It was a great Asian inspired dinner, that was unlike anything I’ve made before.  The recipe was easy to follow, and very detailed. It is perfect for every home chef, even those who have never picked up a skillet before.

For those of you worried about sustainability, don’t fret! All their food is sourced from farms all over the county. Everything is picked and shipped to you fresh! You can even go to their website and learn about some of the farms that your food is being sourced from.  Not only that…. The packaging it comes in is all recyclable, so you really can feel better about creating less waste.

All in all, I give Blue Apron a double high five. Have any of you tried it? If so, I want to know what you thought!

  1. Sounds good. We tried Blue Apron once. A couple of hits and one big miss. I am impressed by how they prep everything.
