So my husband and I started a Thursday afternoon lunch ritual last fall while all 3 kids are at school. Each week we go out for food at a new to us restaurant, in and around Bedford and Manchester.
One week last fall we stopped in at the famous KC's Rib Shack and ordered, sriracha deviled eggs (which I recreated here), bbq ribs, and a peanut butter and jelly hamburger. Yes that is right, a PEANUT BUTTER AND JELLY hamburger! It was served with jalapeño slices and tons of bacon. And it rocked my world!

Peanut Butter and Hot Pepper Jelly Burgers:
These burgers have the perfect mix of sweet, salty, and spicy. If you can't find pepper jelly, you can substitute it for your favorite fruit jelly and serve with sliced jalapeños instead.
4 pretzel buns
1-1 1/2 lbs certified angus ground beef ( I use 85%lean)
2 cloves garlic, minced
1 tsp kosher salt
8 slices of bacon
1/2 cup peanut butter ( I used creamy, but natural or crunchy will be awesome too!)
1/2 cup hot pepper jelly
Optional: Micro-greens or lettuce for topping
Mix ground beef with garlic and salt, form into 4 burger patties. Grill over a preheated grill for about 4 minutes per side. Or until the burgers are grilled to your preferred redness. I like mine well done with just a slight touch of pink.
Serve on a pretzel bun with pickled onions, peanut butter, pepper jelly and greens.
