There is no dessert my husband loves more than a simple chocolate pie or tart served with heaping mounds of whipped cream. I on the other hand do not like treats as rich as this, and my kids are on the same page as me, so I do not make super rich chocolate treats too often.
This year to congratulate my husband on being smoke free for 8 weeks, I made him this chocolate tart and then topped it with strawberry whipped cream. There are few people that know my husband was a smoker, he kept it hidden well. For the last 10 years he has tried quitting more times than I can count, gum, the patch, cold turkey... pretty much every method tried and nothing worked. This time he must have really wanted it because he has done great and I THINK this is it.
What better way to show someone you love them and you are proud of them than a homemade treat? And when that treat is made with a simple THREE ingredients it is a win win, am I right?
Three Ingredient Chocolate Ganache Tart:
1 single pie crust (I use this recipe, you can use store bought as well)
1 cup dark chocolate chips (or other chocolate of your choice)
1/2 cup heavy whipping cream
Preheat oven to 350.
Roll pie crust out to about 1/8 of an inch think and transfer to a 10 inch tart pan.
Place a piece of parchment paper inside the tart, covering the pie crust. Fill with pie weights, or dried beans.
Bake for about 20 minutes or until the crust is golden brown.
Remove pie weights, and allow the crust to cool.
Meanwhile bring a medium bot of water to boil, place a heat proof mixing bowl on top creating a double boiler.
Place chocolate chips in the bowl and whisk until they start to melt.
Whisk in cream until smooth and the mixture has completely melted.
Pour into the cooled tart shell, and refrigerate for about 4 hours or until the chocolate has set.
* To dress the tart up, use any pie crust scraps and re-roll, use heart shaped cookie cutters to create little pie crust cookies. Place on the top of the cooled tart.
