I can not count how many chocolate chip cookie recipes I have tried in my lifetime, each time I get a craving, I try a new recipe out. There are only two cookie recipes I can say for sure that I have made multiple times. One being Joy the Baker's Brown Butter Chocolate Chip Cookies, it is a recipe I know by heart and has never let me down.
Then there are the Superfood Chocolate Chip Cookies from Kelly of Nosh and Nourish (also the author of the new cookbook Superfoods at Every Meal) This superfood cookie is exactly what you expect when eating a chocolate chip cookie, but you would never know that it had some added protein and fiber thanks to hidden chickpeas. It also includes almond milk and coconut sugar along side traditional chocolate chip cookie ingredients like butter and of course chocolate chips.
I was lucky to receive a copy of Superfoods at Every Meal to review. I was impressed with how many easy, family friendly recipes there were using 10 different superfoods. Recipes like Walnut Hummus, Egg Drop Soup, Smashed Berry & Balsamic Kale Grilled Cheese, and of course.... these amazing Superfood Chocolate Chip Cookies!

1 1/2 cups white whole wheat flour ( Kelly uses unbleached all purpose, I just happened to only have white whole wheat)
1/2 tsp sea salt
1 3/4 cup semi-sweet chocolate chunks (Kelly uses dark chocolate chips, again I used what I had on hand)
Preheat oven to 350 degrees and line two cookie sheets with a silicon baking sheet or parchment paper.
Combine chickpeas and almond milk in your food processor and puree until smooth, scrape into a mixing bowl.
Partially melt butter in the microwave, add it to the chickpea mixture alongside the butter, both sugars, vanilla and egg yolks. Mix until smooth.
In a separate bowl, whisk cornstarch baking soda, flour and salt. Add to the wet ingredients, mix until everything is incorporated.
Fold in chocolate chunks.
Using a cookie scoop drop 1-1.5 inch balls of cookie dough on to your baking sheets, 2 inches apart. Bake for about 10 minutes, or until cookies are golden brown, rotating the cookie sheets halfway through the bake time.
Allow to cool, and then enjoy!
Recipe yields about 24 cookies.
