Chicken Fried Steak with Balsamic Mushroom Gravy for Two

I remember the first time I saw Chicken Fried Steak on a menu, I was 21 and we were out to eat that the popular chain restaurant, Texas Roadhouse. I thought it was a disgusting idea... and of course my husband (then boyfriend) ordered it. 

Growing up in New England the only foods I had seen deep fried were things like clams, haddock and of course cider doughnuts. Even fried chicken wasn't something we made at home, that was something only sold at KFC. Fast forward a decade and I am a lover of all things fried. I can not thank the south enough for introducing me to dishes such as this chicken fried steak.
Since I am as Yankee as they come, my version of Chicken Fried Steak is not authentic, I have my own twists on the dish that I am sure you will all love just as much. My kids are  not huge fans of any type of meat (little leaf eater that they are) I made this recipe just for the husband and I a couple of months ago, and for Valentine's Day I think I will be making it again. 
Chicken Fried Steak with Balsamic Mushroom Gravy for Two

1 1/2 lbs cube steak
1 cup buttermilk
1 cup all purpose flour
1/2 cup corn meal
2 tsp kosher salt
1 tsp ground black pepper
1/4 tsp cayenne pepper(optional) 
1/4 tsp paprika 
1 lb baby bella mushrooms 
1 cup small pearl onions (peeled, I use frozen)
2 tsp minced garlic
1 1/2 tbs all purpose flour
1 cup beef stock
2 tbs balsamic vinegar 
2 tsp brown sugar 
1/4 tsp salt
1/4 tsp black pepper
*Scallions or fresh parsley for garnish 
1/2 cup vegetable oil for frying 

Preheat oven to 200 degrees.

In a large skillet heat oil over medium/high heat until it his hot or bubbles when you put the end of a wooden spoon into it. 

In a pie plate or shallow dish combine flour, corn meal, salt, black pepper, cayenne, and paprika with a fork. Set aside.
Add buttermilk to a second shallow dish/pie plate. 
Dredge steak through the buttermilk, then through the flour mixture Repeat process twice.
Place steak (one at a time if you have 2) in skillet. Fry for about 3 minutes or until it is golden brown. 
Flip, and continue to fry until it has browned as well.
Place cooked steak on a baking rack placed on top of a cookie sheet in the oven while you prepare gravy.
Remove most of the cooking oil from the skillet, reserving about 2 tbs. Return to medium/heat and add in the mushrooms and onions. Fry for about 2 minutes tossing lightly. 
Add in garlic and sprinkle with 1 1/2 tbs flour. 
Once the mushrooms become pasty, quickly mix in the beef stock. 
Return heat to high, and bring to a low boil string occasionally. 
Reduce heat, mix in vinegar, sugar, salt, and black better. Once the mixture is thick enough to coat the back of a spoon remove from heat. 
Place steaks on your serving dish and pour gravy over the top. 
Garnish and then enjoy! 


  1. I can't even lie, I have NEVER had chicken fried steak. We didn't eat it growing up North o' the border, and I am still apprehensive about trying it now that I live in the states. BUT you said balsamic...and I put that on ALL the things, so I gotta try this! Pinned!

  4. I grew up in Louisiana where just about everything is fried. I haven't had chicken fried steak in years but I sure do remember loving it. This recipe looks fantastic!
