Grandmother's Chinese Chicken Wings

Christmas comes in like a whirlwind, and leaves you in a house that is upside down and with an overtired bunch of kids surrounded by boxes of unopened toys. Do not get me wrong, Christmas is fun. It is great to spend time with family, eat tons of great home cooked food, and the smiles and laughs from my kids that make every dime spent and moment of planning worth it. 
Now that the holiday season is over, some of my favorite foods are on deck. Lighter dishes, citrus desserts, and of course football appetizers. 
My husband is a huge fan of chicken wings of every kind, Buffalo, Chinese, BBQ. He eats every last piece of meat of those bones and practically sucks them clean, leaving behind a chicken bone yard. 
Over the weekend, I was watching the Food Network and saw a recipe for Andrew Zimmerman's Grandmother's Chinese Chicken Wings, and at 7am in the morning, I wanted nothing more than a huge plate of those wings. I got dressed and ran to Market Basket to get all of the ingredients. 
I did make some adaptations to the recipe, however I stuck to his methods, the result?  The best damned Asian inspired wings I have ever laid my fingers on. 
Grandmother's Chinese Chicken Wings
Recipe adapted from Andrew Zimmerman's Grandmother's Chinese Chicken Wings found on Food Network
Ingredients:
16 wings (segments removed) or drumettes 
3 tbs sesame oil
1/3 cup sake 
1/3 cup soy sauce
1/3 cup water
1/4 cup dark brown sugar
1/4 cup mirin 
1/4 cup oyster sauce
4 large thin slices of fresh ginger
1 cinnamon stick
3 star anise cloves
1 jalapeƱo pepper (sliced in half) 
For garnish:
Chopped scallions 
Sesame seeds
Directions:

In a large skillet (at least 14 inches), heat sesame oil on medium high heat until hot. Add in wings in an even layer. 
Fry wings until golden grown on each side. 
Add in remaining ingredients,  give the wings a stir and deglaze the pan. Evenly coat them all with the liquids. 
Cover pan and allow to simmer for about 10 minutes. 
Uncover,  stir the wings, and allow to simmer until the mixture has thickened and the wings are coated in a sticky sauce. About another 10-15 minutes. 
Place on a serving dish and garnish with chopped scallions and sesame seeds.
