Blue Cheese Broccoli Salad



Last week I spent a couple nights with friends up in Portland Maine, it was a great way to kick off summer and celebrate my 3 year blog anniversary! The trip could not have come at a better time, I have been in desperate need of a little fun and relaxation! I have been online friends with all of the ladies who drove up for a couple of years now, Gina, Rebecca, Candace and I have all met before. However this was my first time meeting Brandy. If you recall she was my partner in crime during Donut Week back in January... so I knew we would hit if off in person as well!

Brandy, Gina, Rebecca and I all stayed at the super hip, modern, sustainable Mercury Inn. This bed and breakfast is pretty unique. It's located right in the heart of Portland, you can walk to almost all the  neat things, or just drive a few blocks and you hit all the restaurants and shops. The rooms were modern, comfortable and the breakfast was amazing. They treated us to Holy Donuts, adorable canning jars filled with Cabot Greek Yogurt with Maine maple syrup, and these little egg cups that were flipping amazing. I typically do not get excited over eggs (who does?) but these were fantastic!

Our stay was filled with beer tastings, french fries, shopping and laughing our asses off because Brandy is pretty much the funniest person on the planet. Seriously you all.... My stomach muscles and cheeks ached when I went to bed at night from laughing!

The first night we all drove over to our friend Candace's house in Cape Elizabeth, located right on Spring Cove. I've said it before, and I'll say it again. Candace has the best spot in all of Maine. Her home is right out of a magazine, with beautiful views and the ocean right at your feet.

Candace spoiled us with home blueberry pies (recipe from my blog!) lobster rolls, grilled steak marinated in beer, salt potatoes (thanks to Rebecca for introducing us all to them!) and a tossed salad that had the most amazing baby greens with a peppery bite to them. 
While at dinner Candace told us all about her favorite salad to bring to potlucks and such. She said she takes some broccoli slaw and tosses it with a jar of coleslaw dressing and then some blue cheese. According to her, people request this salad over and over again. 
The first thing I did when I got home was try this salad out! I took a head of broccoli, tossed in some roasted almonds, red onion, blue cheese and a jar of coleslaw dressing. OH MY GOD. It really is the best salad ever. So easy, refreshing on a hot day and a crowd pleaser for sure. 

Blue Cheese Broccoli Salad
Recipe inspired by Candace Karu 

Ingredients:
2 large heads of broccoli, cut into small florets
1/2 cup chopped red onion
1 cup roasted almonds 
1 12 oz container of coleslaw dressing (the kind you find in the refrigerated section near the produce)
1 8 oz container of blue cheese crumbles
1 tbs red wine vinegar
pinch of salt and black pepper
Directions:

Toss it all together in a bowl and serve! 
Overall the trip was fantastic, lots of fun. I love these ladies so much, it's refreshing to hang out with people who love food, social media... and say the word fuck often. It's not very often I get to hang out with people who get me!

  3. How convenient I have been thinking of making a broccoli salad. I unfortunately just used up all my red onion and don't have blue cheese, but I do have gorgonzola which I think would be good too.

  6. What a fun trip! Maine is awesome in summer... Love this salad! Broccoli salad is one of my favorites but girl you just took it up a notch with blue cheese. Pinning!

  7. My mom makes a similar broccoli salad, but without the blue cheese. I'm definitely adding that in next time I make it; it's my absolute favorite!
