Buttermilk Cake with Whipped Raspberry Buttercream


I wish so badly I could construct perfectly flawless cakes with layers of buttercream and piping that makes everyone oooo and awe.  But I can't.


I've gotten to the point where I don't worry about it all that much anymore. My food is real, and real people can make it... little to no talent required!


This cake is by far one of my favorite basic recipes, most of the ingredients are found right there in your pantry, no need for anything fancy. It's also my favorite way to use up any left over buttermilk sitting in my fridge.

The frosting is a basic buttercream that I whip with some heavy cream and toss in a handful of fresh berries. It may not pipe wonderfully, but I does taste fantastic and has the best light texture.

Carrie, I thought I had some baking skills. . until I tried a few cakes from Surprise Inside Cakes . ha! baking a few cakes from that amazing book was humbling to say the least. . anyway, I don't know what you're talking about. . this cake looks pretty damn good to me. .   2. I'm the same way! I can make delicious cakes, but they never look that pretty. Oh well, it hardly matters anyway! And your cake looks awesome, flawless or not. :)
