Perfect Pizza at Home

Pizza night is always a family favorite around here. Typically I let the kids get their hands dirty, help prepare the dough, and when it comes time to assemble, anything goes! My idea of a good pizza night is when I get a chance to clean out the fridge. All the leftover vegetables, cheese, and meat get tossed on top of our personal pizzas.

I have a trusty basic pizza dough recipe that I have used for years. It’s always good, but it isn’t quite the same as the dough from our local pizzeria. I have been wanting to master pizza dough for a long time now. Luckily Craftsy is offering a Perfect Pizza at Home class,  taught by Peter Rienhart. In the class Peter goes over a few basic dough recipes and methods, as well as teaches us how to create an easy no cooking required pizza sauce, and of course how to bake the pizzas in order to get that great pizzeria style pizza we all know and love.

When it comes to making the dough, I was amazed at how much of a difference the fermentation process matters. I made two pizza’s that week, one with my regular dough recipe and then one with Peter’s American Style “Neapolitan” Pizza Dough recipe. Everyone agreed Peter’s dough was the best!

I also am guilty of purchasing canned sauce all too often. However Peter’s no cook sauce is so easy, cheap, and adaptable. I added in my favorite herbs, a ton of roasted garlic, some balsamic vinegar… and oh man! It was the best pizza sauce ever! I will never ever buy store bought sauce again.

When it came time to bake the pizza, I was amazed at how hot you should pre heat your pizza stone to. I have always baked my pizza’s at about 400-425. Peter say’s to set your oven as high as it goes. Which for me was only 500. Apparently restaurants fire their ovens up to 600-700 degrees. Baking my pizza at that high temp ensured my crust got that nice golden crisp bottom, a little char along the tops of the crust bubbles.

Not only will be be order less pizza take out now that I have taken Peter’s class, my homemade pizza has now been brought up a notch. I highly recommend this class to all pizza lovers!

  1. Wow that looks awesome! Whenever I make pizza, it ends up puffy and misshapen. :) I guess it's all about practice!

    1. Oh you so need to take this class then! You will make the best pizza afterwards. It'll be just as great as take out.

  3. We love making homemade pizza!!! But I agree, it's hard to find the perfect dough. Good to know about the oven! We also heat our to 425 for the pizza stone.

  5. I always like to char my pizza dough first (before adding toppings), either in a pan or by broiling it in the oven to make it extra crisp!
