Can We All Agree to Stop Using the Word Skinny?

The other day Gina started a discussion on her facebook page Running To The Kitchen, about calling a recipe "skinny". I have often thought about the word and it has always left me feeling uneasy. Using it in the title of a recipe is a marketing ploy. "If this recipe is skinny, that means I can eat as much as I want". Not the case, yes those recipes can be lower in calories but are they necessarily healthy? No. They are often times filled with unnatural ingredients, substitute sweeteners and what not. I'm guilty of it. I have a couple recipes on my blog that use the word skinny in the title. I wish I could go back in time and think about what I was writing. Because no food is "skinny".

Do we all know what the definition of skinny is?

skin·ny ˈskinē/ adjective adjective: skinny; comparative adjective: skinnier; superlative adjective: skinniest 1. (of a person or part of their body) very thin. "his skinny arms" synonyms: thin, scrawny, scraggy, bony, angular, rawboned, hollow-cheeked, gaunt, as thin as a rake, skin-and-bones, sticklike, emaciated, waiflike, skeletal, pinched, undernourished, underfed.

Which brings me to my next issue with the word. Why would anyone want to be "skinny"? Scrawny, scraggy, rawboned, hollow-cheeked, thin as a rake, skin-and-bones, skeletal, undernourished? I know I don't. 

I've been called skinny my entire life, and  I have always cringed at the term. I post a cake recipe on my blog and I will have people comment on facebook... "How do you eat all this food and stay so skinny?" I even had someone (a family member) make a comment once "Go eat a damn hamburger, your so skinny."  Now I know that is not meant to be an insult. In fact most people may read that as a compliment. But really to me this is what I hear... "you look gaunt or bony." or "do you have an eating disorder or something?" 

Listen. I've been the true meaning of the word skinny. I had unhealthy eating habits, I was undernourished and truly skeletal. It's not something I ever want to be in my life again. 

Today... I am no longer skinny. Does that mean I am overweight and unhealthy? No it does not, I strive to be healthy. I enjoy REAL food and most importantly I lead an active lifestyle. I actually have no idea what to call my body type. And honestly I don't care.  I am healthy and I am happy. That is all that matters. I won't label my body and I will not accept the labels others place on it either.

Skinny is a word that I am adding to my list of dirty words that I will not use.... I will no longer label my foods as skinny, and I most certainly will not use skinny as a way to describe someone else.

Greek Yogurt Whole Wheat Maple Apple Cake

I am so crazy unorganized ever single day it is silly. I never know what I'm making for breakfast, lunch and dinner, let alone what recipe I might be making for the blog the next day. My best recipes get whipped up in the spur of the moment with little to no planning. A challenge of sorts. What can I make with what I have on hand. Planning is not one of my best qualities, perhaps working under pressure is? Originally I had a Cream of Mushroom Soup with Chicken and Wild Rice on the schedule for today, it was creamy, hearty low in fat and high in protein..... but then I made this healthified cake.

In my book cake trumps soup any day! 

When I was contacted by the National Dairy Council to create a recipe that was Lactose Friendly. I hopped on the opportunity. I won't lie when I say I made several recipes over the weekend that contained dairy and would all count as "lactose friendly". Baking and cooking with Greek yogurt, is probably one of my favorites. I have become a Greek Yogurt convert. It's a great substitute for oils, fats, sour cream, cream cheese.... the list goes on.


 I know when most of you hear me talk about lactose intolerance and eating dairy. Your are like "Hold up... I thought lactose intolerance meant you could not eat dairy?" Wrong. That is not the case. There are many different dairy products that are ok.

Hard Apple Cider Sangria



Every once in awhile I might post a small silly complaint on my Facebook fan page. Something like "My kids are giving me gray hair today!" or "Ahhh my daughter is giving up on her naps" I'm a woman. I'm a mother. I'm busy, I'm flat out exhausted so many days.

Want to know the wrong thing to say to a mom when she is having one of those moments?

"Enjoy it now. It goes so fast." Now I know that type of response  means well. But honestly... I kinda want to punch you in the face right now. I haven't slept more than 4 hours in I don't know how long. I want to take a shower without a TWO kids in there with me. (yes.... the 2 youngest ones weasel their way in) and then my oldest standing in the door.... MOM I need you to make me something to eat! I know you all think I should be enjoying it now, and believe me I am. I wouldn't trade it for anything in the world. But those moments suck.

And dammit I just want someone to listen to me whine!

Really, I do love my kids more than I can put into words. There is nothing I wouldn't do for them. But seriously, they drive me to drink.

Every night I allow myself to have 1 drink when my husband gets home from work. ON a really bad night maybe two. Sometimes  I like to add something special to my nightly drink. Typically I am a straight up cider girl. I love craft ciders. It makes me so happy to see all these cideries popping up all over New England  putting out truly delicious and unique drinks.

Woodchuck Hard Cider is probably the most well known in this area. They are based out of Vermont so of course I am a loyal New England customer and swear by them. They recently sent me a sample of their new Dry Hop Cider, it's infused with hops so it has a unique flavor. It's a nice dry cider and a change from the sweet ones I usually consume.  Not exaggerating when I say it was probably my favorite cider of all time. Only problem is I have yet to find a store near me that carries it. Major bummer.

For now this Hard Cider Sangria is a nice treat, it's sweet, refreshing and perfect for this fall weather we are having on the East Coast.

Grilled Flank Steak Salad with Roasted Figs and Grapes

A celebration of our remaining summer produce and the start of fall. Marinated flank steak served over a bed of greens, along with roasted figs and grapes, topped with a balsamic reduction.  


I love this time of year, the clash of summer and fall brings out the most perfect weather here in NH. 70 degree days with lots of sunshine make me happy. The day I break my blazers and scarves out makes me so happy. This year I was in desperate need of some new fall clothes but have no time to shop. Thank god for Stitch Fix sending me an awesome box for September. What do you think of the items I got? I'm digging the green blazer with the blue scarf....

Other things that make me love this time of year? Figs and grapes. Fig season is coming to an end soon but the grapes are just starting to ripen to perfection. My favorite way of eating almost any fruit is roasted. I adore the rich flavors that develop when they caramelize. They are great snacks, or even great on top of salads. Paired with some marinated steak and fresh salad greens you have yourself a healthy, pretty, and most importantly delicious meal.

Meatball Sub Macaroni and Cheese



Remember this Big Mac post I wrote last year? I recently shared it on my Facebook page, it got a new wind of page views and shares. In that post I revealed I had never eaten a hamburger from a fast food joint, until a year ago when I took a nibble of my husbands Big Mac.


Someone commented that they did not believe me. Is it really that hard to believe? To my knowledge I never had any ground beef  until I was 25-26 and pregnant with Chase. Really I never even ate meatballs!

As a kid I was a vegetarian, and over time started eating meats. Today I love it but only eat it in limited quantities, my husband and I really try to eat a vegetarian diet. But lately we are been so bad! Splurging on ground meats, roasted chicken and BACON too often.


As part of my carnivoristic splurge I made some homemade meatballs made from ground beef and pork and sat them on top of pasta mixed with an Italian cheese sauce, tomatoes sauce and fresh mozzarella. It's a meatballs sub in pasta form.

Not only is this kid friendly, it got two thumbs up from the husband as well.

Farro and Quinoa Sriracha Chili

 A vegetarian chili filled with fiber and protein, even the carnivores will ask for seconds. 


I am a lover of quinoa. We eat it pretty often in our family. It's a great substitute for pasta or rice and as an added bonus it is high in protein so it is also great in vegetarian recipes in place of meat. I knew there were other "super grains" out there but had not really experimented much with them. One day after chatting with Vijay and reading this post I decided to give farro a try to in an effort to reduce my families quinoa consumption and add some more grains into our diets.

Result? I really liked farro! My kids were a tad iffy as the texture is not as soft as rice (which is what they are used to) but combined with quinoa and beans even the fussiest of eaters wouldn't know it was there.

As for the Sriracha, I am rather fond of it as well. If there is one thing I can not live without, it's Sriracha. I put it in everything! There have been days where my breakfast, lunch, and dinner include my favorite chili sauce. One night I ran out of chili powder while making a batch chili, the only thing I had on hand was a bottle of Sriracha. It did the trick, and to be completely honest it made my chili 100x better! Never again will I use  traditional chili powder in my chili.

Lobster and Bacon Cakes with Garlic Aioli



Happy  Birthday to the most handsome man I know. My best friend, my husband, and the father of my three kids.

We are not huge on gifts for each other. It's become hard to buy gifts since we both are pretty simple people and buy what we need and want for ourselves. This year to make his birthday special I made him lobster! (He got it a day early so I could blog it) Tonight for dinner he will get another round of something special plus the dessert he requested. Brownies served with a hot custard sauce. His Grandmother's famous dessert. 

I was worried he wouldn't go nutty over my lobster cakes but he really loved them! They are much like a crab cake, a mixture of lobster meat, bread crumbs egg, mayo and seasoning. Covered in butter then broiled until crispy all over. I served his cakes topped with a Garlic Aioli.

Cider Yeast Doughnuts filled with Cinnamon Caramel

Instead of a traditional fried cider doughnut this fall, try a soft chewy yeasted cider doughnut filled with a buttery cinnamon caramel.

I have a love affair with doughnuts. I appreciate the perfectly fried soft warm doughnut more than most. All too often I order doughnuts from bakeries and am always disappointed. They are typically too greasy or dry because they were not served fresh or were left to left in the oil too long. I think the key to the perfect fried doughnuts is eating them almost immediately!


Cider doughnuts are popular in New England and made fresh at most apple orchards during picking season. They are traditionally cake like, fried and tossed in cinnamon and sugar. I adore simply adore them. Though I also adore a warm yeast doughnut coated in something sugary and filled with various custards or jellies. 


Why not combine cider doughnuts and a soft and chewy yeast doughnut? Clearly it's the thing to do. Breakfast is always better when it involves hot grease and buttery caramel!

My Life Lately

Hello from my little world!

Would you believe it if I told you I have hardly baked in the past month? Yeah... I know. Way to be the "Bakeaholic Mama."

Unfortunatly I just don't really have all that much to share on here lately. Though I did make these. I am pretty sure you will forgive me when you get that recipe on Friday! Yes. Friday... I made them for a special event on a friend's blog, so you'll all have to wait.

 

However I did do this.

Also, guess who has joined the Bakeaholic household....

 

My little sister. She is teaching my kids all kinds of fun stuff... like how to throw gang signs.

 


Owen is on to his second week of school and took the school bus for the first time yesterday. He begged me everyday last week to ride it, just as he did last year. I got worn down and caved. If only he knew how lucky he was to have a stay at home mom who WANTS to drop him off and pick him up.

Don't even get me started on how he wants Chocolate Milk and Hot Lunch!!!!! I wanted to cry when he came home mad that he had a "cold" lunch packed by me instead of French Toast Sticks.....

I am now one of those girls who dresses her dog. And she isn't some little 5 pounder, she's 30 and looks ridiculous.

I am still a die hard fan of Stitch Fix and got a recent fix that was pretty fabulous. I kept two of the items from my box this month. I can't wait to get my next fix.
