Sour Cream Espresso Brownies with Salted Caramels



Do you ever have those moments when you look around you and feel so unbelievably blessed?

Not to get all sappy on you, because that is totally not my style. But sometimes I just stop and look around and go "wow!" I am so freaking lucky. I never in a million years thought I would have all this and be this happy.

I had one of those moments yesterday when I was taking photos of these brownies, the kids were at my side, my 4 year old giving me "pointers" on how to style them (FYI he thought I should put sea shells in the shot). I just stopped what I was doing and absorbed the scene.  Taking in how adorable and sweet the kids are. How pretty my brownies looked, and how much I love what I do.

How many moms get to do a job they love AND stay home with their kids? Not many.

I mean come on.... brownies!



These brownies were pretty fantastic, a classic cocoa fudge brownie marbled with a brown sugar sour cream mixture and filled with chopped up bits of dark chocolate covered salted caramels.


The caramels I decided to use were seriously delicious. I recently received a shipment of chocolates and caramels from Marich Chocolates. They spoiled me a tad. The delivery arrived on Halloween, so I was stocked to the brim with sugar that my waist line probably wasn't begging for.



I sampled a variety of their items, my favorite being their White Chocolate Ginger Bread. It was pieces of crunchy gingerbread cookies, dipped in white and dark chocolate. Pretty much the most delicious candy I have ever tasted. I really truly am not exaggerating. They were so good that there was no chance of saving any to use in my baking. My husband and I actually fought over the last one. My kids were particularly fond of the Peppermint White Chocolate Caramels. As if they didn't have enough Halloween candy... I added caramels into the mix!

Sour Cream Espresso Brownies with Salted Caramels 

Ingredients:

Sour cream layer:
  • 2/3 cup sour cream
  • 2 tbs flour
  • 1 egg
  • 2 tbs brown sugar
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt
For the brownie layer: 
  Directions:
  1. Preheat oven to 350.
  2. Grease and flour a 9x13 baking pan.
  3. In a medium mixing bowl, whisk together all of your sour cream layer ingredients. Set aside.
  4. In a separate mixing bowl, whisk eggs, brown sugar, granulated sugar, vanilla, and salt together.   
  5. Slowly whisk in melted butter.
  6. Mix in flour, cocoa powder and espresso powder. 
  7. Once combined fold in chopped caramels.   
  8. Pour brownie layer into prepared baking dish.
  9. Drizzle sour cream mixture over the top.
  10. Using a knife swirl the layers together. 
  11. Bake for 30-35 minutes or until a toothpick is inserted and comes out slightly moist.   
  12. Allow to cool completely before slicing.

  8. Here on the coast of Washington state, I must confess I've never seen Marich Chocolates. They sure have some inventive combinations that I would be delighted to experiment with.
