Kiwi and Mint Tom Collins



I'm sick... like really super duper sick since Friday. I can't  rid myself of a low grade fever and a nasty chest cold that is taking over my life. I am also packing up our life into boxes, getting ready for the new house... and dealing with a flooded basement. Things have been.... fun. I really want to blog, however looking at the computer screen for too long starts to burn my eyes and makes my brain want to pop... so this is going to be a short and sweet blog post.

In the summer there is nothing I love more than an ice cold cocktail made using gin. I'm not a big cocktail person. I typically stick to wine and hard ciders. However gin has a small piece of my heart. If you are not a gin fan (I'm questioning why we are friends) you can use vodka. You can also omit the alcohol for a refreshing kiwi mint cooler as well.





Kiwi and Mint Tom Collins
 Ingredients:
1 cup of ice
2 oz dry gin
1 oz simple syrup
the juice of one lime
1 whole kiwi peeled and diced
1-2 mint leaves
club soda to top it off.   

Directions:

In a small bowl muddle kiwi and mint leaves together. Add to the bottom of your glass. Add in your ice.

In a drink shaker, shake gin, simple syrup and lime juice together.

Pour over ice. Top off with club soda and give a small stir.

Enjoy!

  1. This could be my 2013 mojito! What a yummy and refreshing drink! Now if we could just get this weather to coorporate we'd be in better shape to enjoy a few on the deck!

    1. Thanks! New Amsterdam if I'm feeling cheap.... but usually I go with Bombay Sapphire.

  10. I love almost all alcohol so this post is right up my alley. I've been making drinks lately for my blog and am having so much trouble photographing drinks. Your photos are gorgeous, Carrie. I need to learn from you! I hope you're feeling better and can enjoy many of these delicious Tom Collins. I love the kiwi and mint twist! Funny enough, I have all the ingredients for this drink at home (except the mint. So in other words, must.buy.mint.immediately!).
