Classic Baked Macaroni and Cheese for Bacon Lovers and a Cabot Cheese Giveaway

 Three states down 47 to go! Today we are traveling over to the Green Mountain's of Vermont. Vermont is known for it's maple syrup, Ben and Jerry's Ice Cream, and it's dairy farms. With all of the dairy farms you of course have cheese. Most famously known for being the home of Cabot Cheese!


Vermont is the prettiest state in the US. Not joking... it really is. I say it all the time. If my husband could find work there we would move in a heart beat. New Hampshire is not all that different, however there is nothing that compares to the rolling green hills and old dairy farms all over the Green Mountains. As  a kid I spent every summer in Vermont, I married into a family of Vermont dairy farmers, I was even married at a old Vermont dairy farm!


What better way to celebrate a state through food than with a big ol' bowl of cheesy macaroni! This is a classic baked macaroni and cheese with a couple twists. The first being that I started my roux with bacon grease instead of butter. I also added in the most ridiculous amount of Cabot Vermont Cheddar Cheese and then topped it with SO much bacon. This is a bacon lover's dream!


When it comes to my dairy products I always buy Cabot. Butter, sour cream, dips, yogurts, and of course cheese. Some of you may ask why I only use Cabot?

I use Cabot because not only do they produce a quality product, they are a dairy cooperative. They are owned by over 1200 local farmers all over New England and upstate New York. I know when I buy their product I am helping my neighbors.

Classic Baked Macaroni and Cheese for Bacon Lovers

Ingredients:

16 oz package of your favorite dried pasta
1 lb bacon
3 tbs bacon grease
3 tbs flour
1/4 cup diced white onion
2 cups half and half
16 oz Cabot Vermont Cheddar Cheese shredded
6 oz cream cheese, cubed
Salt and pepper to taste

Directions:

Prepare pasta according to package directions.

Meanwhile in a large skillet or fry pan fry bacon over medium heat until crisp. Remove bacon and place on a paper towel to strain grease. Before discarding bacon grease from your fry pan reserve 3 tbs for your cheese sauce. 

In a medium sauce pan add bacon grease and diced onion saute just antil onions become translucent then sprinkle with flour, whisking over medium heat until a paste forms. Whisk in half and half and continue to whisk until it comes to a low boil and has thickened.

Whisk in  cream cheese and 2/3 of your  cheddar cheese (reserve last 1/3 of it for topping) . Once all the cheese has melted and the sauce comes together remove from heat. 

Mix cheese sauce and cooked/strained pasta together. Salt and peper to taste.
  
Transfer to a casserole dish. Top with remaining cheese and crumble your 1 lb of cooked bacon. 

Bake at 350 for 20 minutes or until bubbling.  Allow to cool for about 5 minutes before serving.

  4. Love Mac n cheese, love bacon...not so much the onion as it doesn't love me. Always up for trying a new recipe...usually altered due to allergies. LOL. Cobot is a wonderful product. I usually buy local when I can since we have wonderful cheese here in our part of Ohio. Sometime you should try our garlic cheddar or our wine cured aged swiss. yummy, yummy.

  18. Vermont Sharp reminds me of childhood. My grandmother would bring it home after trips to Vermont and make us baked mac and cheese. We couldn't get Cabot in supermarkets yet so this was a huge treat, and we thought it must be extra fancy because it came from somewhere as far away and exotic as VT (we lived in CT, haha!).

  49. The hunter's supersharp is my favorite, but I've never had a Cabot cheese I didn't like. We travel to Cabot creamery several times a year. It's the only cheese we use!

  52. Ohhh, this looks soooo good! I visited the Northeast Kingdom last summer and went to the Cabot Creamery to see how they make their wonderful cheese. Great tour. (also, you forgot to mention the blueberries, Vermont has lushious blueberries!)

  57. I am fortunate enough to be a third generation Vermonter, but unfortunately I no longer live in Vermont. No matter where I live, I seek out Cabot products, and if I can't find them in the grocery store, I order them. Hunter's Sharp or Seriously Sharp are my favorite flavors of cheese.   67. This is going to sound crazy, but I eat Cabot's 50% and 75% less fat cheese by the carload...pepper jack mainly! Only problem, I eat the whole brick with wine! Self defeating, but it makes me feel good! This mac n cheese looks fabulous, Carrie!
