Macaroni and Cheese Quesadillas



Kids are funny creatures. They do odd things when they think you are not looking. Like chew a scab off their foot. Rub peanut butter in the eyes of a baby doll. Decide they want to squeeze a tube of  toothpaste all over the bathroom floor. Vaseline all over the couch is always fun. Sticking Maxie pads to the wall like stickers... and lets not even talk about the time one of the boys discovered tampons...

Then there are the things they say! That's the funniest...

One day Owen proudly comes home from school and announces he has started a one man band named THE JACK OFF FRIENDS.  I kid you not. I can not make this stuff up! What he meant to say was Jack Hammer Friends. Then there was this past Christmas when each of my boys received giant stuffed animals, Owen has a German Shepard he named HUSKY.... And my sweet Chase has a Moose named Killer.  Or what about the kitten we had named BEANO.... like the gas meds.

How do they come up with this stuff? Seriously... always laughing.

There are times when I get stressed and wonder "what the heck goes through that child's mind!?" Hours or even days later (depending on how bad the offense) I laugh. There is never a dull moment, they keep me on my toes at all times. How boring life would be if I did not have them to brighten it up. I thank my three crazy out of control kids every moment for making me  happy and keeping me smiling.


Today marks 6 years of being a mom. The day Owen Jacob came into my world my life changed forever. Owen is sweet, consciousnesses, a tad bossy, smart, he has a never ending knowledge of sharks and whales, a cuddler, and most of all the best protective big brother I could ask for.


 

Happy Birthday OB! It seems like just yesterday your dad and I were snowed in on St. Patrick's day enjoying  a lazy day watching movies.... when you started to wake up and demand your presence be known. 24 hours later on 3/18/2007 at 4:20 PM we welcomed you to the world.Thank you for the happiness you have brought to our lives. I love you to the moon and back.... (times infinity and beyond)


Today to celebrate on my blog, I am combining two of Owen's favorite meals into one kid friendly dinner. 

Macaroni and Cheese meet the quesadilla! 



Layers of creamy mac spiced up a tad with some smoky cumin, extra cheddar cheese for good measure, black bean salsa all sandwiched between super soft tortillas and fried until crispy and brown. 



Tell me... what kid would not want to eat this for dinner? What grown up for that matter wouldn't want to eat this for dinner!


 Macaroni and Cheese Quesadillas

Ingredients:

4 Misson Super Soft Tortillas
2 cups dried pasta
1 tbs butter
1 tbs flour
3/4 cups milk
4 oz cream cheese
1/4 tsp smoked cumin
1/8 tsp salt
1 cup shredded cheddar cheese
1/2 cup black bean salsa
Non stick cooking spray

Directions:

Prepare pasta according to package directions.

Meanwhile in a medium sauce pan melt butter and whisk in flour over medium heat. Once a paste forms whisk in milk. Bring up to a boil. Reduce heat and add in cream cheese and cumin. Whisk until smooth and tick. Mix together with cooked and strained pasta. 

Spread macaroni and cheese evenly on half of each tortilla. Top with salsa and then shredded cheddar cheese. 

Fold top over.

In a non stick pan, sprayed with cooking spray place one quesadilla at a time and fry over medium heat for approximately 1 minute per side. Or until golden brown and crisp. Remove from heat and enjoy!

  4. I remember when you posted about "the jack off friends" on Facebook, I just about died laughing. Kids are amazing. Yours seem like the sweetest and I wish I lived closer so I could meet them! This mac and cheese quesadilla... what can I say, you're a mad genius.

  16. OH what a fun dinner idea! My youngest adores mac and cheese and is always asking for mac and cheese pizza (Thank you CIci's Pizza for introducing us to that) He is going to flip for these quesadillas!!!

  20. Awww! Happy Birthday Sweet Boy! Since most of our leftovers evolve into quesadillas,I'm really loving the idea of doing so with mac & cheese. Sadly, we rarely have leftover mac & cheese, so I'll have to just start with the quesadillas.

    P.S. I swear that hospitals must have a decorating code or something. I had my babies at two different hospitals, and both of them had the same wallpaper border shown in your pictures. Must be Maternity Room Chic.
