Kids are funny creatures. They do odd things when they think you are not looking. Like chew a scab off their foot. Rub peanut butter in the eyes of a baby doll. Decide they want to squeeze a tube of toothpaste all over the bathroom floor. Vaseline all over the couch is always fun. Sticking Maxie pads to the wall like stickers... and lets not even talk about the time one of the boys discovered tampons...
Then there are the things they say! That's the funniest...

Today marks 6 years of being a mom. The day Owen Jacob came into my world my life changed forever. Owen is sweet, consciousnesses, a tad bossy, smart, he has a never ending knowledge of sharks and whales, a cuddler, and most of all the best protective big brother I could ask for.
Happy Birthday OB! It seems like just yesterday your dad and I were snowed in on St. Patrick's day enjoying a lazy day watching movies.... when you started to wake up and demand your presence be known. 24 hours later on 3/18/2007 at 4:20 PM we welcomed you to the world.Thank you for the happiness you have brought to our lives. Today to celebrate on my blog, I am combining two of Owen's favorite meals into one kid friendly dinner.
Macaroni and Cheese meet the quesadilla!
Layers of creamy mac spiced up a tad with some smoky cumin, extra cheddar cheese for good measure, black bean salsa all sandwiched between super soft tortillas and fried until crispy and brown.
Tell me... what kid would not want to eat this for dinner? What grown up for that matter wouldn't want to eat this for dinner!
Macaroni and Cheese Quesadillas
Ingredients:
4 Misson Super Soft Tortillas
2 cups dried pasta
1 tbs butter
1 tbs flour
3/4 cups milk
4 oz cream cheese
1/4 tsp smoked cumin
1/8 tsp salt
1 cup shredded cheddar cheese
1/2 cup black bean salsa
Non stick cooking spray
Directions:
Prepare pasta according to package directions.
Meanwhile in a medium sauce pan melt butter and whisk in flour over medium heat. Once a paste forms whisk in milk. Bring up to a boil. Reduce heat and add in cream cheese and cumin. Whisk until smooth and tick. Mix together with cooked and strained pasta.
Spread macaroni and cheese evenly on half of each tortilla. Top with salsa and then shredded cheddar cheese.
Fold top over.
In a non stick pan, sprayed with cooking spray place one quesadilla at a time and fry over medium heat for approximately 1 minute per side. Or until golden brown and crisp. Remove from heat and enjoy!
