I love easy pizza days. With just a few kitchen staples and some leftovers you can whip up a quick, healthy pizza for lunch or a late night dinner when you are too pooped out to cook.
I did this for my husband the other night and he thought it was a thin crust I had made from scratch. Little did he know it was just the lone pita pocket sitting in it's bag partially stale! Topped with some chopped veggies, fresh mozzarella cheese and left over chicken.... you have a well balanced meal.
5 Minute Chicken Caprese Pizza
Ingredients:
1 pita bread
1/4 cup cherry tomatoes
2 oz fresh mozzarella cheese sliced
6-8 basil leaves diced
1/2 cup diced or sliced cooked left over chicken
1 tsp balsamic vinegar
Directions:
Place your pita on a pizza stone or lined cookie sheet. Layer cheese slices, tomatoes and chicken. Place under your brioler for about 60 seconds or until the cheese is melting.
Drizle pizza with vinegar and place basil leaves on top.
Slice and enjoy.
(Recipe yields two servings)

DeleteCarrie your photos are so pretty. I tried to shoot pizza before (not for my blog) and it always comes out looking horrendous. I don't know how that's possible because it's PIZZA but I am always in love with pretty photos pizza when I see them. Just thought you should know you have my drooling here staring at these pictures. :)
