Chipotle and Avocado Grilled Cheese Sandwiches

I am the lucky mom who has found herself with too much time on her hands this morning. I was not planning on doing a blog post.... but I just had nothing better to do. The boys went North to spend the night at my parents house, Hubs is working so it is just Madelyn and I.



Man is having one kid easy! I think back to the days when I had only one child and how stressed and busy I thought I was. Hahaha... yeah I had no idea. With three kids under the age of 6 life is crazy all the time. I love every moment and would not change a thing. Life is NEVER boring in the Bakeaholic Mama household.

In my crazy home there are days when I do not have much time to make something fancy. I like quick meals. If I can make something yummy that only takes ten minutes. You better believe I am all over that.

On those kind of days I turn to the classic kid friendly grilled cheese sandwiches. Though not only for my kids. But for my husband and I. There is nothing more comforting than a bowl of hot soup and a crusty, buttery, cheesy sandwich.

A few weeks ago Cabot sent me a box of cheese, included in the box was their Chipotle Cheddar Cheese. I. Am. In. Love. It's the best cheese on the planet. I am not joking. I have since bought 2 blocks a week! My husband and I can't stop snacking on it.

My favorite way to enjoy Cabot's Chipotle Cheddar Cheese? In sandwiched between two slices of homemade bread, with mashed avocado and fried. Scrumptious.

Chipotle and Avocado Grilled Cheese Sandwich

Ingredients:

 2 slices of your favorite sandwich bread
2 tbs of salted butter (this is one of the rare occasions I choose salted!) 
1/2 cup shredded Cabot Chipotle Cheddar  Cheese
1 small ripe avocado, mashed 

Directions:

Heat skillet until smoking, reduce heat to med/high. Butter two slices of bread, spread shredded cheese and avocado in the center of the un buttered side of one slice. Top with the remaining piece of bread (buttered sides out. Place in the skillet and fry until golden. Flip and fry the other side until it is golden as well.

  1. I would love to try it however we don't get Cabot cheese, what can I substitute with? I have some chipotle powder and have some chipotle chillies in adobo sauce? Thanks a million!

    1. Hi, if you can't find the Cabot brand Chipotle cheese you can look for another comparable brand that is local to you. You could add the chipole flavor to the sandwich a variety of ways. Perhaps chop up some chipotle peppers and mix them in to your mashed avocado then use sharp cheddar or Monterey jack cheese in place of the Cabot.

  7. What a lovely surprise to relax and write a post! I totally agree - with 3 kids under 5 in my house, I can get SO much accomplished when my hubby takes the older two out! This sandwich looks delicious.
