Breakfast in my house needs to be easy to whip up. Most days it consists of toast, a boiled egg and perhaps a slice of avocado smeared on top. While my kids live in a world of cold cereal and instant oatmeal. One would think that I would have these crazy spreads laid out for my family considering the way I cook and bake.
Here's a little Carrie fun fact, I hate mornings. Most nights I am called to by one of the three kids, several times. "MAAAAMMMAA, I need to go pee." Well go pee then! Or " I need water" I gave you water before you went to bed... it's right THERE! Or then there is my 1 year old who still does not sleep thought the night and wakes up crying. I think I am up more than I am asleep. This overtired mom has no time for fancy breakfasts.
Since I slack in the breakfast department most days, on occasion I get real crazy and whip up a breakfast casserole or scramble eggs and fry some bacon. This week for my out of the norm breakfast, I made these breakfast squares. They are so easy to make and eat without dirtying a bunch of dishes! Hand held, no forks or plates needed. That's a win for this lazy mom!
Jalapeno Cheddar and Bacon Breakfast Squares
Ingredients:
4 slices of day old bread
7 eggs
1 cup sharp cheddar cheese
4 oz cream cheese room temperature
1/2 cup milk
1/4 tsp salt
1/4 tsp chili powder
6 strips crispy fried bacon
2 jalapeno peppers sliced thin (optional)
Directions:
Preheat oven to 350.
Grease a 9x9 baking dish. Place 4 slices of bread in the bottom of the dish.
In your electric mixer whip cream cheese until light and fluffy. Mix in half of your cheddar cheese, then your eggs one at a time, followed by the milk. Mix in salt and chili powder. Pour over bread slices.
Top casserole with the remaining cheddar cheese. Crumble crispy bacon over the top of the casserole and top with optional jalapeno peppers.
Bake for approximately 40 minutes. Or until the center stops jiggling and the top has browned.

DeleteI am with you on the morning hate. Late nights are so easy, but the minute I have to get up...uuuggghh! Make ahead breakfasts have to happen around my house too. This is such a fun egg casserole and I know my kids would love all the bacon on top.

Delete5 a.m. is vile. Period. I'm a big fan of make ahead breakfasts--I don't do 6 a.m. well-- so this would be a great, hearty breakfast for me & my guys. They will at least try anything with bacon on it.

It's gross right!? Just holding a raw egg still in it's shell you can contract it. So either be vigilant about hand washing or try Safest Choice eggs ;)

DeleteI need this casserole in my life, stat! I love breakfast bakes, especially since you can usually prep it the night before and then just pop it in the oven - so much easier than standing at the stove mixing, frying, etc. I'm definitely not a morning person. It's a miracle if I can hoover down some cereal before racing out of the house to speed to work. I don't even have kids so I have no excuse. I'm in total awe of you for having 3 lil ones, being sleep deprived and still booking/baking up a tantalizing storm for your awesome blog.
