What a busy couple of weeks! I do apologize for not posting anything new for quite sometime. You love me still right?
For those who follow me on facebook or twitter know that I just returned home from a trip to Pembroke, Virginia for MixedCon. A food blogging conference where I learned so many great things, met some famous people...... and had the time of my life.... at the resort Dirty Dancing was filmed at! To kick my back to blogging off.... I had beer for breakfast. Just what you need after 13 hours of travel and no sleep right?
These bagels are quite easy. They are super chewy on the outside, topped with some crispy cheese, soft and pillowy on the inside with some heat from the jalapenos. If you don't cook with beer these can easily be made with water instead. I like to use beer because it's fun and it pairs great with cheese.
We eat a lot of bagels in our family. It's my go to easy breakfast. Though I have a problem. I don't own a toaster.... yeah I know. I have a $700 stand mixer.... but not even a basic toaster? Silly really. So I make our bagels and toast in the oven broiler. And 90% of the time I forget about it and I burn the toast.
I can't even make toast!
Luckily for me Magimix sent me the king of toasters! Hooray! No one can make fun of my inability to toast bread. It's clear so I can watch my toast.... no more burning in this house again! It has easily programed toasting buttons..... all I have to do is hit "Bagel" and it toasts it perfectly and evenly!
And how cute is it?! A fun looking toaster that is not an eyesore on your counter top.

After you get your toaster... make these bagels and have beer for breakfast!
Beer and Cheese Jalapeno Bagels
2 cups warm beer (I heat mine up on the stove so it reaches just warmer than room temp)
5-6 cups bread flour
1/4 cup sugar
1 tsp salt
1 tbs onion powder
2 1/2 tsp instant dry yeast (I proof mine)
2 large jalapeno peppers diced
1 cup sharp cheddar cheese
1 additional tbs of sugar for boiling
Warm your beer up on the stove until it reaches room temperature. Meanwhile proof your yeast according to the directions on your yeast container.
In the bowl of your electric mixer with your dough hook add in 2 cups of your flour, beer, sugar, salt, onion powder, and jalapenos. Mix until combined. Mix in yeast and remaining flour 1/2 cup at a time until dough comes together and is is just barely sticky to the touch. Add more flour if need be.
Turn mixer on high and "kneed" the dough for 3-4 minutes or until the dough is smooth and elastic. If you don't own a mixer, you can kneed it by hand for 6-8 minutes.
Form dough into 10-12 balls. Using a floured finger poke a hole in the center of each ball. Stretch dough into a bagel shape. Set on parchment paper lined cookie sheets to rise until doubled. Mine took 35 minutes.
On the center rack of your oven, broil each sheet of bagels for about 2 minutes per side. Or until golden. Careful not to brown!
Meanwhile bring a 6qt pot of water to a boil with 1 tbs of sugar.
Place bagels in boiling water, reduce to simmer. Simmer for 5 minutes flipping each bagel over half way through. Place bagels on paper towels to dry.
Place bagels on the parchment paper lined cookie sheets again and return to the oven and top with cheddar cheese.
Bake at 375 for about 20 minutes or until golden all over.
Allow to cool before slicing.
