Salted Caramel Popcorn Bars



SURPRISE! Rachel, you are having another baby!

Not that you need me to tell you that, but for those of you who don't know Rachel, from Rachel Cooks formally known as Not Rachel Ray... She's about to pop!

Since her blogging friends are spread out all over the world we can't really attend an actual baby shower for Rachel. So what better way to celebrate her newest addition, than a virtual shower?


Do you know how refreshing it is to see someone else is having a baby? YAY for once it's not ME! Don't get me wrong I miss some parts of pregnancy and of course the newborn days.

Wait. Did I really just say that out loud?

I'm pretty sure if you were to ask my husband if I enjoyed pregnancy or the newborn days, he'd ask if you were smoking crack. I'm pretty sure pregnancies were filled with endless weeks and months of morning sickness, back pains, heartburn, and of course labor. But then it's so worth it, all that crappyness is gone the second you see that tiny little baby. You would do it all over again.

Even during those newborn days filled with no sleep, getting the hang of nursing, or those first few diapers. You get those quiet moments when your baby sleeps on your chest, or when they give you those little gassy smiles in their sleep. It erases all the negatives. Having babies is just.... amazing. This is why I have 3! (And no there will NOT be a 4th!) 


Rachel is borderline obsessed with popcorn. The girl eats a lot of it. Naturally a bunch of us are sharing some popcorn recipes amongst some other great shower foods! 


These Salted Caramel Popcorn Bars are the perfect amount of sweet and salty. It's a basic caramel corn pressed into bar form and sprinkled with some coarsely ground sea salt.

They are so easy and fast to whip up. Mix it up and add in some chocolate, nuts, m&m's, get real crazy... and add in some pretzels?



Start to finish,  they take about 20 minutes to make and another 20 to harden. Not to shabby huh? I bet you all have the ingredients in your pantry to make them now!

Salted Caramel Popcorn Bars
(Recipe adapted from Taste Of Home)

Ingredients:

4 Cups popped popcorn
1/2 cup brown sugar
1/4 cup unsalted butter
1/4 cup corn syrup
2 tbs all purpose flour
1 tbs vanilla extract
1 tbs of coarsely ground sea salt

Directions:

In sauce pan over medium heat add brown sugar, butter, corn syrup, and flour. Bring to a boil whisking occasionally boil until it reaches 245 degrees on a candy thermometer (hard ball stage). Remove from heat and whisk in vanilla.

In a large bowl add in popcorn and quickly toss with caramel sauce.  

Press into a parchment paper lined 8x8 or 9x9 baking dish. Press Popcorn in making sure it is tight before it hardens. 

Sprinkle with sea salt.

Allow to sit for atleast 20 minutes before cutting.

  11. "Are you smoking crack?" My husband would say the same thing! I do not miss pregnancy, or even the newborn days, but maybe because I think my 2 year old is so much more fun than any of that early stuff. I love hearing what is in her tiny brain, the best stuff in my entire life are in those little words :)
    ANYWAY, Congrats to Rachel! And I love these bars, perfect road trip snack :)
