Pumpkin Spice Latte Krispie Treats ~ And a Gift Card Giveaway!~



What is your favorite childhood treat? You know that snack or treat mom used to make to bring to your school bake sales. I bet a huge chunk of you would say Rice Krispy Treats right? 

Today my friend Jocelyn from Inside BruCrew Life has a Krispy treat that adults will go crazy for. Or at least this pumpkin latte crazed adult will eat an entire pan of these all on her own!

Hi, Bakeaholic fans.   I'm Jocelyn from Inside BruCrew Life.    
I was so excited when Carrie asked me to participate in her pumpkin week.
Pumpkin is my all time favorite flavor to bake with when it gets cooler.
Something about the flavor and smell baking gets me every single time!!!


If you visit my blog you will see how much I am addicted to the orange stuff.
are just a few of the things I have had in my kitchen so far this Fall.
I say had because things made with cinnamon and pumpkin have a way of disappearing
very quickly when they come out of the oven in our house.

Today I thought I would share a cheater pumpkin recipe with you.
It's cheater because it actually doesn't have any pumpkin in it.  What???

That's right...I am here at Pumpkin Week and I don't have any of the orange stuff.
Don't tune me out just yet though!
I mean these are rice krispie treats...the most loved treat of all!
Well, I happen to think so.

These are no regular krispie treats though...I gave them the royal pumpkin treatment.
Have you seen those bags of pumpkin marshmallows at Walmart?
I used a whole bag of those, plus some instant coffee
to give these babies a jolt of pumpkin latte goodness!!!

And of course every latte has foam, 
so a layer of white chocolate and pumpkin pie spice give the bars that very finished look.
Ok, so I guess they really do have pumpkin in them...just not the kind you were thinking:-)

Pumpkin Spice Latte Krispie Treats

3 Tbsp. butter
1 bag pumpkin marshmallows (8 oz.)
2 Tbsp. instant coffee
4 c. rice krispie cereal
1/2 c. chocolate rice krispie cereal
2 c. white chocolate chips
1 Tbsp. shortening
pumpkin pie spice

Butter a 9x13 pan and set aside.  In a large saucepan, melt the butter.  Add the instant coffee and stir until dissolved most of the way.  (It will continue to dissolve as you keep heating the ingredients.)  Add the marshmallows and stir until completely melted.  Stir in the rice krispies until they are coated.  Press very lightly into the prepared pan.  (Do not press hard or you will have hard treats.)  Let cool and set. 
In a microwave safe bowl, combine the white chips and shortening.  Heat for 30 seconds and stir.  Repeat until the chips are melted and smooth.  Spread over the krispie treats.  Sprinkle with a light dusting of pumpkin pie spice.  Let set before cutting into squares.

  2. I definitely grew up with Rice Crispies! They're my mom's guilty pleasure. Sometimes we wouldn't even wait for the pan to cool before diving in...they're best when still warm!

  4. We absolutely grew up with Rice Krispie treats! It was our go-to snack. If we were really daring, we'd substitute Cocoa Krispies. We were wild children like that.

  14. Wow, these look fantastic! I liked making these treats with my mom. Although I loved to bake (mostly cookies), I never actually participated in/went to a bake sale. They weren't around my school when I was young! :( Deprived, I know.
