Normally Sunday breakfast consists of bacon and eggs, maybe some pancakes, muffins. Or my all time favorite baked treat. Banana bread.
Banana bread is one of those things I can never get enough of. It's so versatile and there are so many great recipes to try.
My husband has a soft spot for anything with chocolate chips, so I added them to my whole wheat banana bread recipe. It did the trick. When he smelled it coming out of the oven, he ventured down stairs without the kids having to hound him to wake up!
I wonder if he knows how lucky he is to wake up to the smell of fresh baked banana bread in the AM?
Chocolate Chip Whole Wheat Banana Bread
2 cups white whole wheat flour
1 cup bread flour ( you can sub this for AP)
2 cups sugar
1 cup of mashed banana (about 2 bananas)
1/2 cup of vegetable oil
1 tsp baking soda
1/2 tsp salt
1 tbs vanilla extract
1 tsp cinnamon
Preheat oven to 350.
In a large mixing bowl sift together flours, baking soda, salt and cinnamon. Set aside.
In a separate bowl, cream sugar and mashed banana together. Mix in oil, vanilla extract, then your eggs one at a time.
On medium speed mix in your flour mixture one cup at a time just until it is incorporated.
Fold in chocolate chips.
Grease and flour a 9x5 loaf pan.
Bake for 60 minutes or until a tooth pick is inserted and it comes out clean.
