Caramel Apple Crisp Cheesecake ~The Secret Recipe Club~



Guess what!!

Dunkin's Pumpkin is back!  I'm so over the moon excited about this little bit of information you have no idea. I await the arrival of pumpkin coffee most of the year.

That's it. It's official. HELLO FALL!!

It's also my very last Secret Recipe Club reveal :( Big sad face there. As much fun as it has been I just can't juggle all my club/group recipe posts anymore.

I was so happy to see my very last Secret Recipe Club assignment was a friend.



Jocelyn is the creator of Inside BruCrew Life. It's a fun dessert blog with too many recipes to choose from. I am an avid reader, I keep up with Jocelyn's posts daily. I can't count how many recipes she has posted that I am like... "MAKING THIS ASAP" but then life gets in the way and I don't get to it. Now I have an excuse to make anything I want from  the tons n' tons n' tons of  mouth watering treats on her blog.

If I had to choose one word to sum up her blog style I'd have to say she is fun. Her recipes are soooo fun!

I wonder if her kids know they are the luckiest kids on earth to have these kind of treats rolling out of the oven so often?

I went back through Jocelyn's archives, browsed recipes for almost an entire day. Which by the way made super hungry. I could not make up my mind. BUT then I saw THIS Apple Crisp Cheesecake recipe and I knew I didn't need to look any further. Two of my favorite desserts in one spot.

The cheesecake is light and rich then topped with a traditional apple crisp and drizzled with caramel you really can't go wrong with this dessert. Lucky for me, my husband isn't too keen on cooked fruit, nor are the kids. SO I seriously ate these cheesecake alllllll. By. My. Self.



Caramel Apple Crisp Cheesecake
(Recipe adapted from Inside BruCrew Life)  

Ingredients:

For the cheesecake:
2 cup graham cracker crumbs
1/2 cup butter, melted
1/4 tsp salt
3 8 oz. cream cheese packages, softened
3 eggs
3/4 cup sugar
1/4 cup sour cream
1 tsp. vanilla

For the apple layer:
5 cups peeled and sliced apples
1/2 cup brown sugar
1 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp ginger
1 tbs of corn starch

For the topping:
1/2 cup all purpose flour
1/4 cup rolled oats
1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp ginger
2/3 cup brown sugar
1/4 cup softened butter
12 caramels
1 tbs cream
1/4 cup walnuts


Directions:

Preheat oven to 350.

In a mixing bowl combine graham cracker crumbs, melted butter and 1/4 tsp salt together with a fork. Press inside the bottom of a 9 or 10 inch springform pan. Bake for 5 minutes. Remove from oven to cool.

Meanwhile in the bowl of your electric mixer cream cream cheese and sugar together until light and fluffy. Add in eggs one at a time. Mix in sour cream and vanilla.

Pour into springform pan. Set aside.

To start your apple layer, in a large bowl combine apples, brown sugar, spices and corn starch. Carefully layer on top of cheesecake.

To make your topping mix all of your ingredients (except caramels and walnuts) when mixture is resembles course crumbs sprinkle on top of the apple layer.

Bake for 1 hour. Turn oven off. Sprinkle  cheesecake with walnuts, close the oven door and let sit for an additional hour.

Refrigerate for 4-6 hours (or overnight) Just before serving; melt caramels and cream together over low heat stirring constantly. Drizzle over cheesecake slices before serving.

  2. Oh, I am so excited to see that you had my blog!!! I saw all your instagram pictures and wondered if it could possibly be one of mine:-) This is one of my husbands favorite cheesecakes...in fact it was his idea to top the cheesecake with the crisp!!! I had actually forgotten all about this one...eeeeiiikkk to the scary pictures of mine. Now that I know my camera a whole lot better that is one that needs a redo for sure:-) I love the way you changed up the recipe! Caramel drizzle...why yes, I think I will:-)

  13. I had you, I had you!!! I was sooooo excited to read across my screen that y assignment was Bakeaholic Mama!!! It was such a blast playing around in your world but it was a touch decision. As you know I landed on your grapefruit bars to which I shoul dhave made a triple batch because they were gone once pulled out of the oven. I went to fold laundry and came back to half the tray missing and had to put a stop to that so I could take some pic's. Excellent recipe Carrie!!! :)

  23. I look forward to fall every year. It is, without a doubt, my favorite season. I love the crisp air, the pumpkin flavored everything, and apple pickin'. And, of course, I get to wear all of my fancy boots.

    Every year I add a new dessert to the Thanksgiving menu, and I think this is going to be that dessert. Eek! I can't wait. This cheesecake looks killer!

  30. Just wondering if your amounts for the topping are off...I just made it and it was more of a paste than a crumble. I had to keep adding flour and oats to get it to a crumble.... Looking forward to trying it though! Thanks. :)

  32. This cake is my nightmare. My stomach is already bulging, face sweating, hands clammy, as I imagine not being able to stop eating this! Total doomsday for me. But oooh so good!

  33. Hi Carrie! Do the apples sink at all or do they stay up at the top of the cheesecake during baking? I want to make this for my dinner party this weekend. Do you think I could make it tonight, then freeze it until Saturday?

  34. This is a wonderful recipe! Tried it for Christmas and botched the baking time. After another hour in the oven the center solidified a bit more. But the flavor - Perfect! Next time it stays in the oven for the FULL duration.

    I thought the crust was too thick (used 2 inner packages) and would lighten up on the cracker crumbs next time.
