Bourbon St. Chicken Lettuce Wraps

I didn't have a blog post scheduled for today. It's a rainy morning in NH and I am sitting here with nothing to do as the kiddos are watching some PBS.

Who am I kidding... I have TONS to do. Laundry, dishes, vacuuming, cleaning up the shredded mess of a basement (thanks to the dummy dingo pup!)... I just don't want to do those things right now!

I'm a big girl I get to decided when I have to do the big girl chores right?

I'm feeling kind of. Yuk today. 

I started my morning off with a mean spirited commenter that kinda put me into a funk. I always know when I post something opinionated there will be people who disagree. But man seriously mean people always catch me off guard.

A few bloggie's jumped to my rescue with reassuring words.... "They need more sprinkles in their life" one person said on twitter.

You know what it's true! Some people just need some funnfetti cake, or chocolate chip cookies in their life. If they ate more they wouldn't be such nasty little trolls.

If you don't like what I have to say.... well then leave. No skin off my back. There will just be "NO COOKIES FOR YOU!"

Yes I'm saying "NO COOKIES FOR YOU" in my Soup Nazi voice.

Don't know who the Soup Nazi is?

Well you clearly don't watch enough Seinfeld re-runs.

So enough getting hurt feelings and being overly sensitive I'm keeping my cookies and cake for the ones that love me =)

I have plenty of sunny days in my life with people who matter to me!

The past two days have been fabulous weather and I have had a blast with the kids and my Sister.

Day one we went fishing.

Yes two little blond girls took a couple boys fishing. We kicked fishing butt if I might say.... The boys had a blast and could not wait to brag to their Dad when he returned home.

Day two, we drove down to Rye, New Hampshire to enjoy a day on the beach. It was gorgeous! We had a ton of fun though we did not stay as long as we had hoped since 3 kids under 5 are a lot of work at a crowded ocean beach!

While my sister was staying with us I made some really awesome food. First up I did some bean and cheese bacon wrapped jalapeno poppers. Can you say OMG?! I will be posting them later this week on the blog. Best appetizer on the face of this earth!

Then I made these Bourbon St. Chicken Lettuce Wraps.

Remember THIS chicken I made a few months ago? Well I made that, diced the chicken up really small, wrapped it up in some lettuce leaves with some rice noodles.

Best dinner ever! And not so bad for you either!

My Bourbon St. Chicken is my husbands newly declared favorite meal. It's the perfect blend of sweet, salty and spicy Asian flavors. Forget the Chinese takeout... make this at home to curb that craving.

Then pair it with my favorite... Fried Crab Rangoons!

Bourbon St. Chicken Lettuce Wraps


2 lbs of boneless skinless chicken thighs cut into small pieces
1 tbs of olive oil
1 clove of garlic minced
1/4 tsp freshly grated ginger
3/4 tsp red pepper flakes
1/2 cup of apple juice
1/4 cup water
1/3 cup soy sauce
2 tbs ketchup
1-2 tbs corn starch
1 tbs cider vinegar
1/4 cup brown sugar
1/4 of a red bell pepper sliced thin
Half of a carrot pealed and sliced thin

1 head of ice burg lettuce: leaves carefully separated
6 oz package of rice noodles cooked according to package directions
Sliced scallions (optional)
Sesame seeds (optional)


In a large fry pan heat your olive oil, add chicken when oil is hot. Fry until chicken is browned, does not need to be cooked through.

Remove chicken from pan and whisk your remaining ingredients together (except carrots and bell pepper), bring to a boil then reduce heat to med. When sauce has thickened add chicken back in along with the veggies and cook until chicken is coated and cooked through. Veggies should be slightly tender but still crisp.

In each lettuce leaf, pile some rice noodles in the center then top with your Bourbon St. Chicken. Sprinkle with scallions and sesame seeds.  Wrap the lettuce much like you would a burrito!

  2. Carrie, I'm so sorry that you ended up with mean spirited commenters. There is a difference between having an opposing viewpoint and being inappropriate or cruel. I hate that some people do not understand the difference between the two.

    On a more upbeat note, your lettuce wraps look just gorgeous!

  4. Sometimes I just don't understand people. Disagreement is one thing, mean is quite another. I mean, can't we just agree to disagree and be happy with that?
