Brown Butter Banana Blueberry Cake with Blueberry Cream Cheese Frosting

My husbands employees must be getting fat... I bake for them all to often.

Is that bad of me?

I recently saw an article on yahoo news (why do I read that crap?)

About co-workers resenting other co-workers for bringing fattening foods causing them to put on pounds.

Is it bad to send goodies in to work places tempting those who count calories?

Or is it the persons own responsibility to have self control when someone brings in cake or orders out lunch everyday?

Who's fault is it??

Should I be more aware when bringing things filled with brown butter and sugar?

Though I have to say... no one complains at his work... being that most of them are hungry salesMEN... who gobble everything up with in minutes of me setting the box or tray down.

This cake in particular was VERY popular amongst the guys a couple weeks ago. I can't wait to make it again for the family. Perhaps this weekend with an upcoming gradation party....

Brown Butter Blueberry Banana Cake with Blueberry Cream Cheese Frosting


1 cup sugar
1 cup mashed bananas (About 2)
1/2 cup browned butter cooled slightly
2 beaten eggs
1 cup flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon salt
3/4 cup fresh blueberries

For the Frosting:
8 oz room temperature cream cheese
1/4 cup blueberries
1 tsp lemon zest
2 cups confectioners sugar
pinch of salt

*Additional berries for garnishing


Preheat oven to 350.

In the bowl of an electric mixer cream sugar, bananas, and brown butter together. Slowly add in your eggs while mixing on medium low. Pour in your flour, baking soda, cinnamon, nutmeg, and salt. Mix until combined. Gently fold in your berries.

Pour cake batter into a greased 8x8 or 9x9 baking dish bake for 30-35 minutes or until a toothpick is inserted and comes out clean.

For the frosting,

In your electric mixer cream the cheese, and berries together until you get a faint purple color... you want the mixer to go ahead and mash your berries up a big. Mix in lemon zest, sugar, and salt. You can add more sugar if you want a stiffer frosting or less for more creamy and loose.

This frosting is very lumpy and rustic looking.

I chose to layer the cake with fresh berries on top of the frosting so we had layers of blueberry goodness! You can choose to do the same or serve it as is!

  1. This looks fabulous Carrie! My step sister works for my husband and is always telling me to stop sending sweets in to work with him, lol! I love this cake. Its loaded with blueberries and I love that! I want a piece of this with my morning coffee! :)

  2. LOL, Carrie... I do the SAME thing to Brian's co-workers! I figure that if I drop things off for them to eat and they choose NOT to eat them, it's their loss that they're missing out on some of the best baked goods on the earth! No, I don't have an ego problem. Why do you ask? ;-)

  6. this looks gorgeous! and i do the same exact thing with my husband - i send most of the fattening stuff into his office. i can't risk having all of it home all day with me! =)

  8. I hate Yahoo articles yet I find myself reading them again and again.. I think there is no self-control when you make a dessert like this, Carrie! It's too delicious and tempting! YUM!

  11. Nobody forces them to put cake to mouth unless they feel their job is in jeopardy if they don't partake. Tell them to get some self control and take only one piece. :)

  12. I send a lot of my baking with my husband to work far I haven't heard any complaints. In fact they will ask for something if I haven't sent anything in a week or two. I think it is the persons responsibility to have self control around the sweets anyway:-) I know I don't so my self control is to get it out of the house! This cake is freaking awesome!! I love all the flavors you have packed into it...and the fresh blueberries on top is just perfect!

  14. the moms at the park always "complain" I'm bringing sweet treats at play-dates but I always leave with an empty plate. I have no idea who's to blame. Me for bringing or them for eating :))

  15. What a yummy cake - I want to make this!!!! As far as treats in the workplace, I think it's great - and it brings people together and allows them to socialize a bit. That being said, I worked for a Fortune 500 company as an auditor for over ten years right out of college as an auditor. I ate all sorts of treats and they can be dangerous. I was 20 pounds heavier then! 20!!! So, everything in moderation, right? Oh and that green smoothie looks so yummy too! I had a smoothie this morning but not nearly as green...!

  16. I am all for gifting baked goods upon friends--workplace or otherwise. No one *honestly* complains anyway. ;)

  17. I totally send goodies to my hubbies work all the time, and they complain too....AND eat it all! So I say keep sending the treats, it is all just talk, they want the goodies:-) This cake looks so hearty and gorgeous! Hugs, Terra
