My husbands employees must be getting fat... I bake for them all to often.
Is that bad of me?
I recently saw an article on yahoo news (why do I read that crap?)
About co-workers resenting other co-workers for bringing fattening foods causing them to put on pounds.
Is it bad to send goodies in to work places tempting those who count calories?
Or is it the persons own responsibility to have self control when someone brings in cake or orders out lunch everyday?
Who's fault is it??
Should I be more aware when bringing things filled with brown butter and sugar?
Though I have to say... no one complains at his work... being that most of them are hungry salesMEN... who gobble everything up with in minutes of me setting the box or tray down.
This cake in particular was VERY popular amongst the guys a couple weeks ago. I can't wait to make it again for the family. Perhaps this weekend with an upcoming gradation party....
Brown Butter Blueberry Banana Cake with Blueberry Cream Cheese Frosting
1 cup sugar
1 cup mashed bananas (About 2)
1/2 cup browned butter cooled slightly
2 beaten eggs
1 cup flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon salt
3/4 cup fresh blueberries
For the Frosting:
8 oz room temperature cream cheese
1/4 cup blueberries
1 tsp lemon zest
2 cups confectioners sugar
pinch of salt
*Additional berries for garnishing
Preheat oven to 350.
In the bowl of an electric mixer cream sugar, bananas, and brown butter together. Slowly add in your eggs while mixing on medium low. Pour in your flour, baking soda, cinnamon, nutmeg, and salt. Mix until combined. Gently fold in your berries.
Pour cake batter into a greased 8x8 or 9x9 baking dish bake for 30-35 minutes or until a toothpick is inserted and comes out clean.
For the frosting,
In your electric mixer cream the cheese, and berries together until you get a faint purple color... you want the mixer to go ahead and mash your berries up a big. Mix in lemon zest, sugar, and salt. You can add more sugar if you want a stiffer frosting or less for more creamy and loose.
This frosting is very lumpy and rustic looking.
I chose to layer the cake with fresh berries on top of the frosting so we had layers of blueberry goodness! You can choose to do the same or serve it as is!
