A Braided Strawberry Rhubarb Cheese Danish



This week blows...

Actually I take that back... the past 2 weeks have blown.

My husband worked 65 hrs week 1... then this week... he has worked 80 hrs.  In 14 days he had 1 day off. The hours don't include his commute time. In total he has been away from the house a staggering 87 hrs this week and 72 the week before.

We are one of those couples that does everything together... in 12 yrs we really only spend the daytime apart during working hours. We don't travel without one another or do nights apart for anything really.

When he gets his first day off... This Sunday... I have to pack up and leave for VT.

As if my anxiety about leaving the kids isn't enough, Mads has never had a night away from me in her 9 months... in fact the longest I have ever been away from her is 3 hrs while I was volunteering at my oldest son's school.

So on top of that guilt... I miss my husband like crazy and also feel SO bad that his first day off I'm jumping ship and leaving him with the kids for 3 days.

When I want to really impress him or make him something special... I make him a strawberry cheese danish. My husband LOVES Strawberry Cheese Danishes! LOVES them!

I used to use store bought pastry which I always had on hand... but now I know how to make my own puff pastry!! Thanks to my friend Jeni =)



He knows the work that goes into that flaky pastry to make his special danishes, so I know he would appreciate his breakfast when he woke up.

I also made enough for him to take to his employees that day... because he was pressed for time running out of the house without breakfast... he took the whole box to his work and was going to eat one when he got there.

Well.... a swarm of hungry sales people snached every last one up and he didn't get ANY!



I wish I had the time to do another batch of pastry before I leave for Blog and Bake... though I don't think I can pull it off! I'll have to make him something else special to eat when I'm away.... that and stock up on beer.... he's going to need it at the end of each day with these 3 rugrats all day!

Atleast I took pictures so he can get the idea that it was a knock your socks of danish.....

Strawberry Rhubarb Cheese Danish

Ingredients:

1 sheet of puff pastry homemade or store bought (for how to make pastry CLICK HERE)
1 1/2 cups of rhubarb sliced thin
1 1/2 cups straberries sliced thin
1/4 cup sugar
1/4 cup King Arthur Flour Pie Filling Enhancer ( for best results I highly recommend using it... CLICK HERE to see what it is)


For the Cheese Filling:
1 8 oz pakage room temp cream cheese
1/3 a cup of sugar
2 egg yolks
the zest of 1 lime
pinch of salt

Egg white for brushing
Raw Sugar for sprinkling


Directions:

In a medium mixing bowl toss all of your fruit filling ingredients together. Set aside.


In an electric mixer beat your cheese filling ingredients together. Set aside.


Roll you pastry out so it was 1/4 - 1/8 of an inch thick.  Lightly score the dough into 3rds (this is just for a guid) 

In the center section of pastry, spread your cheese filling. Top with your fruit filling.



On the two outer sections using a pastry cutter or sharp knife carefully cut diagonal sections about a 1/2 inch thick.

I got 14 pastry sections on each side.

Alternately fold the sections over the filling creating a braid like appearance.

Brush lightly with  your egg white and sprinkle with raw sugar.

Bake on a parchment paper lined cookie sheet at 400 for about 25 minutes or until it is golden. 

Allow danish to cool for about 30 minutes and then slice into 1 1/2- 2 inch pieces. Mine made 12 servings.  




   

Now.... this can be as easy or as hard as you want it to be... using store bought pastry would save you a tremendous amount of time for a quick breakfast treat.... Though nothing tastes better than buttery homemade pastry! Either way... you will wow who every you are sharing this with. It's so pretty and seriously yummy!

PS I made the exact filling for some small pies this week as well... he did get one of those and flipped over it.... didn't even know I had put rhubarb in it! So I think I have switched my rhubarb hater over to my side!!!!

  1. This is a dessert that had me at "Hello!" It looks absolutely divine and I will give the homemade puff pastry a go as well :) (So, ready by Sunday brunch? My arms are gonna get quite a work out!)

  4. The Danish looks PERFECT. Yum yum! As for time with your man, sorry! We do wind up spending time apart (it is the nature of our lives -- like we always plan two tickets to Brazil every 15 months, but my MIL has had cancer on and off and sometimes he needs to go see his mom in between and getting enough money for one extra ticket is difficult, two is impossible / I have school trips to sponsor / out of state weddings I am a bridesmaid in on random Thursday nights [???] and he can't get the time off of work / etc.) but we are a couple that UNDERSTANDS that. Because when we are together, we are TOGETHER. But enjoy your time, try not to feel too guilty, and remember that they will have Daddy-daughter bonding time which is a good thing.

    1. Thanks friend! After reading my post I feel that I sound a tad whiny lol! It probably wouldn't be an issue my leaving for 3 days if If I had seen him at all the past 2 weeks... and the hardest part is the kids missing him. They have seen him for a split second every morning for a kiss good bye as he heads out the door... then he gets home after we are all in bed. *Sigh* at least there is a an end in sight!

  5. This danish is absolutely gorgeous, Carrie and it sounds so delicious! I make my own puff pastry, too and I agree that nothing is better that homemade!
    I totally understand how difficult it is to have your husband gone so much. My husband has traveled for work for years and when our kids were little, it was especially difficult. It definitely gets easier as they get older!

  8. I can sympathize. My husband and I are pretty attached and when work gets intense it's very difficult to spend time apart. I hope things get better soon! The danish looks wonderful and I love the photos.

  10. that danish is mouth-watering! i used to eat danishes all the time when i was in undergrad and let's just say, i put on a few pounds but it was totally worth it...lol.

  11. I can always relate so much when you tell stories about your hubby. My husband and I are very similar - together all the time, etc. We even worked together until I got my home office a couple years ago. He is also a huge pastry fan so I'm going to bookmark this one!

  13. I perfectly feel for you...My husband was supposed to come home too, in time for my daughter's 3rd bday party yesterday but there was a major problem in the office that he had to stay and postpone his vacation ( he has been out of the country for 10 months...)
    Long story short, I had to single handedly take care of everything from balloons to menu, guests and additional entertainment for the party so that my little girl wont feel her father's absence. Well, we still have to go from here to there...with or without our better halves, haven't we?
    I am sure this treat will make me feel a lot better too...Thanks!
