Make Your Own Puff Pastry and Leek and Asparagus Quiche ~Sundays With Joy~AND A GIVEAWAY!!!!

Today I have a giveaway for you all!!! But before we get to that.... Sunday's with Joy and a little recipe!!

Also...Happy Mothers Day to all my Mamas out there!

In celebration of Mothers Day I've prepared you a fantabulous Mothers Day Brunch Recipe... Of course we were able to find something spectacular for Mothers Day in The Joy The Baker Cookbook: 100 Simple and Comforting Recipes.

For any dad's reading out there... this can be super easy... you can do it!

Every wife/mom secretly wishes for a morning of sleeping in and then to be awoken with a gourmet breakfast in bed.

She'll think your a super star if you make this! Trust me... I would do back flips if my husband made me breakfast in bed!

Now in Joy's recipe she uses store bought pastry. I'm not judging, in fact I ALWAYS have store bought pastry in my freezer. But to challenge myself... I was going to tackle making my own puff pastry.... the right way... not the cheats way. I've done short cut methods before. They are good... but not as flaky and buttery as one would expect when eating a pastry.

So who do I turn to for help on how to make my own pastry?

Jenni from Pastry Chef Online!

Jenni is a member of our Sundays With Joy group, she is a great resource! She is a former special ed teacher turned pastry chef! She has a series of fantastic online tutorials and recipes on youtube as well as a blog with great recipes.

I watched her video several times. And though she does not have the recipe published on her blog... at about 50 seconds into the video the recipes is listed.

Because I didn't have my trusty ipad on me the day I made the pastry... I had to turn to someone with a printable recipe. That is similar to Jenni's. I had found THIS recipe from White on Rice  and it's great!

Basically here is a summery of how you make your own puff pastry. First... make your butter block.

To do that you mix a whole lot of a butter... like over a pound! With a little flour from it into a block and chill.

Then you make your dough. Dough consist of some flour, more butter, water... Let it chill.

Then you roll out a "envelope" out of your dough and stuff it with your butter block.

Then you roll, fold, and chill.

Then roll fold and chill 6 more times!

It's a work out on the arms let me tell ya!

But see all this puff and flake?!?

Leek and Asparagus Quiche
Adapted from Joy the Baker Cookbook 100 Simple and Comforting Recipes


1 batch of puffed pastry (Homemade or all butter store bought)
1 tbs of olive oil
1 leek thinly sliced and rinsed well
1lb of asparagus chopped into 1/2 inch pieces 
1 clove of garlic minced 
1 1/4 cup milk
1 cup of light cream
6 large eggs
1 tsp of salt
pinch of ground nutmeg
1 cup of grated Smoked Gruyere Cheese


In a large fry pan add olive oil and leeks over medium heat saute until the leeks are translucent. Add in asparagus and garlic and toss for about 2-3 minutes.

Remove from heat and set aside.

In a large bowl whisk milk, cream, eggs, salt, nutmeg and half of your cheese together. Set aside.

In a large sheet cake pan (mine was 9x13)  roll dough out and press into the bottom and up the sides of the pan. Pour your leeks and asparagus into the bottom of the pastry.

Pour your egg and cheese mixture on top of the asparagus. Sprinkle with your remaining cheese.

Bake at 350 for 40 minutes. The quiche will be puffed up  quite a bit but will fall when it cools. Set aside for ONE HOUR! This is tough because it's going to smell amazing and you will want to eat it right away. But don't let it sit for 1 hour before stuffing your sweet little faces.
