If you follow me on facebook or twitter, you have seen the recent cake/cupcake baking spree I went on. Luckily for my bum.... they were not for me!
The Hub's Aunt Debbie turned 60 this weekend. Her son and daughter threw a surprise party for her up in VT... I was on cake duty!
The only direction they gave me were that the colors were lime green and pink.... and lets do something chocolate.
Ok I got this!
This Dark Chocolate Cupcake with Dark Chocolate Buttercream was one of 3 types of cupcakes I made for the party as well as a small cake.... those recipes will be up soon I promise!
But for now can we indulge in some over the top chocolate? There is a bowl of leftovers in the fridge that is calling to me right now. I must bake something to frost SOON!
Dark Chocolate Cupcakes with a Dark Chocolate Buttercream
For the Cupcakes:
I used THIS recipe from a previous cake post. Divide batter into cupcake liners (mine made 18...) bake for 15-20 minutes or until a tooth pick is inserted and comes out clean. Cool then frost.
For the Frosting:
1 cup room temperature butter
1 oz melted quality dark chocolate cooled just slightly
1 tsp vanilla extract
1 tbs of instant coffee granules
4 cups powdered sugar (maybe more maybe less)
About 1/4 a cup of heavy cream (maybe more maybe less)
Start by creaming the butter in your electric mixer. Pour in slightly cooled chocolate (you don't want it to MELT the butter) , add in vanilla and instant coffee.
Slowly add in sugar 1 cup at a time, if it seems to thick add in heavy cream until you reach the consistency you want.
Pipe onto cooled cupcakes.
