Cookies and Cream Fudge Marbled Cupcakes with Cookies and Cream Cream Cheese Frosting

This is an easy one.

Being crunched for time in the cupcake madness last weekend... I couldn't do everything from scratch.

Ran to the local country store... and I had one kind of cake to choose.

A fudge marbled box cake mix.

SO to soup it up I grabbed a package of Oreos.

Because when in doubt. Oreos. Always Oreos.

Fudge Marbled Cookies and Cream Cupcakes:

For the cake:

1 box of marbled cake mix
1 package of double stuffed Oreos

Directions:

In your food processor pulse half the cookies until they are fine crumbs

Follow directions on the back of your box, after you have divided the fudge part of the mix out.

Mix in half of your Oreo crumbs into the vanilla cake part.

Pour into cupcakes liners, and dollop the fudge mix on top. Give it  little swirl with your spoon.

Bake according to box directions.

For the frosting I adapted THIS recipe from my Oreo Red Velvet Cake

2 packages of cream cheese at room temperature
1 cup of heavy whipping cream
4 cups of powdered sugar
1/2 package of double stuffed Oreos pullsed into crumbs

Directions:

 In the bowl of your electric mixer whip your heavy cream until soft peeks form. Add in your cream cheese and whip until they are combined.  Mix in powdered sugar on medium/low speed. Wiping down the sides of the bowl as needed to ensure everything is evenly mixed. Fold in Oreo crumbs.





Frost cooled cupcakes and top with half an Oreo.
