First, I should share a little about me. I started creating recipes long before I started my blog, CafeTerra Blog. I guess that is why I decided it was time to start my site, and share my passion for food.
My day job is Senior Food Safety/Quality Assurance Auditor for a third party auditing company. So I get to work with food day AND night, BONUS!!!
I enjoy creating recipes from scratch, or changing up a recipe to make it my own. Today I decided to make a muffin recipe from scratch using delicious strawberries. I love this time of the year! I could add strawberries to everything, they are so wonderful.
This recipe is a perfect recipe for breakfast, it is not only healthy, but also filling. I am huge fan of quinoa, and love adding it to my baked treats. A few weeks ago I made Strawberry Banana Quinoa Bran Muffins, and included my favorite Chobani Greek Yogurt. Since August 2010 I have been working on 52 ways to enjoy Chobani Greek Yogurt...stay tuned!
Strawberry Chocolate Breakfast Muffin - Recipe by Terra Baltosiewich
prep time - 15 min. Cook time - 25-30 min. Serving - 5 large or 12 regular muffins
1/4 cup chocolate whipped honey (sub with regular honey or 1/2 cup sugar)
1/2 cup sugar
1/2 cup cooked quinoa
1 tsp vanilla extract
1/4 cup olive oil
1/4 cup almond milk
2 cups all purpose flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1/2 cup semi sweet chocolate chips
1 cup chopped fresh strawberries
1 Tbsp flax seed meal
Preheat oven to 350 degrees Fahrenheit. Grease muffin tin with cooking spray.
Chop strawberries finely.
In medium bowl - mix together chocolate whipped honey, eggs, sugar, cooked quinoa, 1 tsp vanilla, olive oil, almond milk.
In small bowl - mix together flour, baking soda, baking powder, salt, flax seed meal, chocolate chips, and strawberries.
Combine wet ingredients with dry ingredients. Fill muffin cups 3/4 full. Bake for 25-30 minutes depending on oven.
*Notes on the recipes* I added the milk after completing the recipe. I found the muffins to be slightly dry, so I wanted to add a little moisture. Plus, if you can't find whipped honey, you could use regular honey or just add 1/2 sugar to the recipe.
