Mexican Grilled Cheese Sandwich

Yay it's National Grilled Cheese Day! I made this sandwich weeks ago shared a photo on facebook and everyone flipped over it.

So I guess it's time I share with you the method!

Mexican Grilled Cheese Sandwich

2 slices of bread
2 tbs of butter
1/4 cup of black beans/ drained and rinse
2 tbs of your favorite salsa
1/2 tsp BLUE MYSTIC SPICE Chipotle Taco seasoning
1/4 cup shredded pepper jack cheese
1/2 of an avocado mashed
1 tbs of diced green onions
The juice from half a lime
A few jalapeno slices (optional)
Fresh Cilantro (optional)

In a bowl mix together your beans, salsa, green onions lime juice and taco seasoning.

Butter one side of each slice of bread. On the un buttered side of one slice spread bean mixture onto it. Top with jalapenos, avocado and cheese, then with your bread.

Fry on medium/high heat until each side of your sandwich is browned.

  1. YUM!!! I love the avocado {and jalapenos} in this!! So very creative!!!

  2. You are creative thinking of this very delicious and interesting way to eat a grilled cheese sandwich :D

  3. What do you think would be a better side to have with this - rice or chips/queso?

  4. What do you think would be a better side to go with this - rice or chips/queso?

    1. It's a grilled cheese sandwich, anything goes. I am sure chips or rice would be fine.
