Oh what a week it has been! Thank goodness it's Thursday! My husband has today off, and after a super long week with the kids I am grateful he'll be around for an extra set of hands!
He is supposed to go golfing with a work friend in the morning. Is it evil of me that I'm kinda hoping it rains so I can go to my Bikram Yoga class instead?

I former co worker of my Husbands got me hooked on it a couple months ago and I'm addicted. I look forward to my class. Unfortunately because of some things going on at work... Hubs isn't home as much so I'm not able to attend as often as I'd like to in a week.
For those of you that don't know what Bikram Yoga is... It's also known as Hot Yoga. It's a form of yoga done in a 105 degree room. It's intense. But a good intense. Never in your life will you enjoy working up a sweat like you do in this class!
From what I've read you can burn 500 calories in one 90 minute class. That's a crap load of calories people!
In the 2 months I have been going to Bikram Yoga, I haven't lost any weight ( I didn't really want to) but I've gone down a full pant size, I have toned my core and my legs. I have more energy. I'm happier. It's like taking a happy pill. Seriously. Screw Prozac or Zoloft or any other mood mender pills you can pop. Try this class it's done wonders for this mom who has battled with some postpartum issues. After having Mads I've had some ups and downs with energy, and emotions as most mothers do. On the days I go to my class I come home with a lightened step, positive outlook, and no need for coffee the rest of the day (normally I sip on coffee all hours of the day!) OH and not only that... I sleep better at night, and my back problems are starting to get better!!
Go find a Bikram studio near you! Try it.... don't let the 90 minutes 105 degrees scare you. It's awesome!!

I asked you all on my facebook fan page, what kinds of things you would like to see more of.
The number one answer was Easy Weeknight Meals. The number two was Lightened up Dishes. SO I combined the two and came up with this for you all.....
Of course I took something light and smothered it in cheese. But these Black Bean Burgers can be as healthy as you'd like or not so healthy. Either way you will get tons of vitamins and minaerals between the patty and the avocado and veggies you choose as condiments.
|Poop Patties is What's for Dinner Boys!|
Some people have turned their noses up. Ewww. Like my Son Owen.... "Mama it looks like a Poop Patty!" He would love it if he tried them. My boys love Mexican food and black beans. My husband has it in his head that he doesn't like them either.... if it's not greasy and filled with pink slime ground beef... he doesn't want to eat it!
Black Bean Burgers:
Makes 4 burgers
2 cans of black beans drained and rinsed
1 jalapeno pepper dice
2 tbs of finely diced red onion
2 tbs of finely diced red bell pepper
1 tbs of minced garlic
1/2 cup plain bread crumbs
1 beaten egg
1/2 tsp salt
1/2 tbs cumin
1/2 tsp chili powder
4 bulkie rolls
1 avacado mashed
sliced red onions
Pepper Jack Cheese
I like to use a potato masher because I like pieces of whole black beans in my burger however this can all be done in your food processor as well!
In a large bowl mash beans, mix in egg, bread crumbs, spices and diced veggies. Mix until it comes to gether. With your clean cooking hands form into 4 patties.
In a large skillet over medium/high heat add in 1 tbs of oil, fry patties 5 minutes. Flip and fry for another 3-5 mintues.
Place on your favorite kind of roll and add in your favorite condiments.
I used, mashed avocado instead of mayo. Salsa instead of ketchup. A slice of pepper jack cheese, sliced red onions and lettuce. YUM YUM YUM.
