I of course take a salad and make it as unhealthy as possible but try to cover up the calories and sodium content with a lame attempt at a healthy salad dressing.
Seriously you are eating a bowl of bacon.... a low sodium dressing is not going to make a smidgen of a difference.
The bacon cups aside... this dressing is OUT OF THIS WORLD! Seriously amazing. I found the recipe over at my friend Ann's blog Sumptious Spoonfuls. I made a few adaptions because I was working with what I had on hand, but it still came amazing. So good I was dipping chips in it later that night... I actually licked the bowl clean. Really I did.
Now for the bacon cups...I was a little scared with the making of these cups. Yeah...my method might catch my house on fire. I've done this... It's not fun
The last two times I caught my stove on fire (in our old apartment) it was a scene! The first being on Christmas Eve with my In-laws while I was making a Prime Rib Roast and boiling Lobsters. Somehow we made it through dinner despite the side show of Carrie putting flames out!
The second time I caught that stove on fire I boiled water over.... It caught the stove on fire so bad I had to use the fire extinguisher on it. The worst part was that the house was so full of smoke I had to waddle my pregnant butt out the door with my 18 month old son to go for a walk until it aired out. In the meantime my husband arrived home to find a house filled with smoke, a kitchen covered in white stuff (thanks to my handy fire extinguisher) and a missing pregnant wife and toddler.
Perhaps I should have left him a note?
-"Husband, I caught the kitchen on fire, got smoked out. Be back later. Love always, Your Wife."
Yeah... he only panicked a little bit.
Luckily for me, in the making of these Bacon cups I did not start a grease fire!
Avocado Ranch BLT Salad in Bacon Cups
To make one Bacon Cup:
6 Slices of uncooked bacon
1 Jumbo muffin tin
1 cookie sheet
Preheat oven to 400.
Place a cookie sheet on bottom layer of oven (to catch any dripping grease)
Flip Muffin tin upside down and line outside with foil, fold edges up. (This is to help catch the grease)
Take 2 slices of your bacon and crisscross it over the top of the foil lined muffin tin. Take 2 more pieces of bacon and wrap around the sides. Folding it under almost weaving it.
Bake for about 15 minutes until it starts to crisp. Most likely if your bacon is like mine it will have shrunken up a bit.
Take 2 more slices of bacon and wrap it around the sides.
Bake for another 10 minutes or until bacon is all crisp.
Remove bacon "bowl" from the cookie tin and let it sit on some paper towels to absorb some of the grease.
Mine looked a little sloppy, so I went through with kitchen sheers to trim it up and make it look uniform.
For the Salad
-a handful of chopped Ice burg Lettuce
-4-6 Grape Tomatoes
For the Dressing:
1/3 cup mayo
1/3 cup light sour cream (or Greek yogurt)
Few tbs of milk ( is use 1 %)
2 cloves of garlic
4 fresh basil leaves
1/2 tsp dried parsley
4-5 sprigs fresh dill weed
1 scallion top
1/2 an avocado
Salt to taste ( I omitted the salt... since I had all that wonderful salty bacon)
Dump all of your ingredients into your food processor and process until smooth with the exception of the milk. Add milk in until you get the consistency you like,I used about 3 tbs because I wanted a thick dressing... if you want it pourable add a bit more milk.
Fill cooled bacon cup with lettuce and sliced grape tomatoes, top with your Avocado Ranch Dressing.
You can use a fork.... cut your bacon bites. OR fold the bowl and eat it like a taco. I'm a bit of a pig... I gave up on the fork and stuffed it in my pie whole with my hands.
