Valentines Day, Valentines Day, Valentines Day.....
This year I will be celebrating my V-day with my hubs and 3 kiddos. Hopefully... if we are lucky, I'll get them to bed early so we can enjoy our annual romantic dinner for two.
We are funny some years we go all out buy gifts and the whole shebang. Other years we are lucky if we even buy a Hallmark Card for each other. No matter what we always spend the day together. This will be our 12th Valentines Day together our 6th as a married couple.
When we were in high school Stevie (hubs) would always always always buy me 1 single long stem red rose, a card, and a big bag of Hershey Kisses (with almonds) my favorite.
As we've gotten older he has stopped with the bag of kisses and brings me home a bottle of my favorite bubbly instead.
He knows how much this girl loves her champagne!
Oh do I love it!

I'd like to introduce you all to Jax.
Jax is the writer and creator behind Cooking with Jax. She and I connected a few of months ago and have become good foodie friends. She does fantastic recipe posts every Sunday on her blog, as well as works 3 jobs! She is a book keeper, a column writer, and a teacher! I'm tired just thinking about how busy her days must be!
When she emailed me her guest post and I saw that it was a Champagne cocktail I was over the moon excited!

I’m Jax, from Cooking with Jax, a blog of original recipes updated every Sunday. I’m honored to be posting as guest blogger today on Carrie’s amazing blog.
I’m celebrating Valentines Day this year with the love of my life, my husband of 5 years – Marc.
We live in one of the most beautiful places – the heart of the Rocky Mountains in Hinton, Alberta Canada. In addition to the website, I also write a feature for our local newspaper, work as the bookkeeper at our local art gallery, and teach technology courses at the learning center. You could say I’m a Jax-of-all-trades. Writing and baking are my true passions, which is why I decided to create Cooking With Jax.
When I heard Bakaholic Mama was looking for Valentines Day guest bloggers I was really excited! I saw her page for the very first time a few months ago – and I have been impressed ever since. Her recipes make me drool on a constant basis, and she is a continuous inspiration to me every day. I hope you enjoy this recipe, and make it for your special someone this Valentine’s Day.
This recipe also goes really well with ginger ale if you would like to make a non-alcoholic version. If pomegranates weren’t out of season right now (there are only a few sad looking ones left on the shelves of my local grocery stores), I probably would have sprinkled a tsp or so of arils (pomegranate seeds) into each flute for garnish.
- 1 cup your favourite champagne
- ½ cup pomegranate juice (I like Bolthouse Farms)
- 2 tsp pomegranate syrup (see below)
Combine pomegranate juice and syrup and stir until dissolved. Divide between two champagne flutes. Top each flute with champagne. Repeat as necessary. ;)

Calories - 174 Fat - 0 Carbs - 21 Protein - 0 Fibre - 0
- 1/2 cup pure pomegranate juice (I like Bolthouse Farms)
- 1/2 cup raw or granulated sugar
Combine sugar and pomegranate juice in a small saucepan set to medium heat. Bring to a boil, whisking often.
Once mixture begins to boil, cook for 8 minutes, continuing to whisk the mixture often.
Pour into a mason jar (or other heat resistant container) and let cool for about an hour. Place lid on syrup only after it has cooled completely to prevent condensation in the container.
