Quinoa Almond White Chocolate Chip Cookies

I <3 me some Quinoa!

My kids gobbled these up little did they know they were getting big doses of fiber and protein in a cookie!

Quinoa Almond White Chocolate Chip Cookies
 Recipe adapted from Bon appetit


1 1/2 cups white whole wheat flour ( I was out so I used all purpose)
1 teaspoon kosher salt 
1/2 teaspoon baking powder 
1/2 teaspoon baking soda 
1/2 cup unsalted butter, room temperature 
1/4 cup sugar 
1/4 cup brown sugar 
1/4 cup maple syrup
2 large eggs 
1 teaspoon vanilla extract 
1/2 teaspoon almond extract 
1 cup cooked quinoa, cooled 
1 cup old-fashioned oats 
1 cup white chocolate chips
 1/2 cup slivered honey roasted almonds


In the bowl of your electric mixer cream butter, brown sugar, and sugar together until light and fluffy.

Mix in maple syrup and eggs one at a time until combined.

In a medium bowl sift together flour, salt, baking soda, and baking powder.

Slowly pour in flour mixture until combined (1 cup at a time)

Fold in oats and quinoa.

When those are combined mix in almonds and white chocolate chips.

With a 1 tbs cookie scoop, drop mounds on a parchment paper lined cookie sheet. Press down slightly with a floured spoon (these cookies do not spread much so the shape that you drop is the shape you cookies will be)

Bake at 375 for about 12-15 minutes.


  1. Wow these look AMAZING! And not to mention, a healthy delicious cookie none the less. I never thought to use quinoa in a cookie. I cook quinoa all the time, easy and healthy but I have to try this now. Great post Carrie!!!!

  4. Is there any way to leave out the almonds and almond extract? My youngest has severe nut allergies.
