Quinoa Almond White Chocolate Chip Cookies
I <3 me some Quinoa!
My kids gobbled these up little did they know they were getting big doses of fiber and protein in a cookie!
Quinoa Almond White Chocolate Chip Cookies
Recipe adapted from Bon appetit
Ingredients:
1 1/2 cups white whole wheat flour ( I was out so I used all purpose)
1 teaspoon kosher salt
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 cup unsalted butter, room temperature
1/4 cup sugar
1/4 cup brown sugar
1/4 cup maple syrup
2 large eggs
1 teaspoon vanilla extract
1/2 teaspoon almond extract
1 cup cooked quinoa, cooled
1 cup old-fashioned oats
1 cup white chocolate chips
1/2 cup slivered honey roasted almonds
Directions:
In the bowl of your electric mixer cream butter, brown sugar, and sugar together until light and fluffy.
Mix in maple syrup and eggs one at a time until combined.
In a medium bowl sift together flour, salt, baking soda, and baking powder.
Slowly pour in flour mixture until combined (1 cup at a time)
Fold in oats and quinoa.
When those are combined mix in almonds and white chocolate chips.
With a 1 tbs cookie scoop, drop mounds on a parchment paper lined cookie sheet. Press down slightly with a floured spoon (these cookies do not spread much so the shape that you drop is the shape you cookies will be)
Bake at 375 for about 12-15 minutes.

Wow these look AMAZING! And not to mention, a healthy delicious cookie none the less. I never thought to use quinoa in a cookie. I cook quinoa all the time, easy and healthy but I have to try this now. Great post Carrie!!!!
