So I know you have tried this chicken!
Tender pieces of chicken in a sweet and slightly spicy sauce over rice.
Bourbon St. Chicken
Recipe adapted from BigOven
Ingredients:
2 lbs of boneless skinless chicken thighs cut into chunks
1 tbs of olive oil
1 clove of garlic minced
1/4 tsp freshly grated ginger
3/4 tsp red pepper flakes
1/2 cup of apple juice
1/4 cup water
1/3 cup soy sauce
2 tbs ketchup
1-2 tbs corn starch
1 tbs cider vinegar
1/4 cup brown sugar
1/4 of a red bell pepper sliced thin
Half of a carrot pealed and sliced thin
Directions:
In a large fry pan heat your olive oil, add chicken when oil is hot. Fry until chicken is browned, does not need to be cooked through.
Remove chicken from pan and whisk your remaining ingredients together (except carrots and bell pepper), bring to a boil then reduce heat to med. When sauce has thickened add chicken back in along with the veggies and cook until chicken is coated and cooked through. Veggies should be slightly tender but still crisp.
Serve hot over a bed of rice.
