Is it a cookie? Fudge? Or a Brownie?
A little of all 3 I suppose.
And to bring it over the top... salty cashews and gooey chewy caramel.
These cookies were a HUGE hit over the weekend!
When I saw these Black Gold Cookies on Foodgawker. I immediately pinned it. The next day I new I wanted to make them.
I had a big ol' tin of cashews and a bag or caramels calling my name as well.
So there you have it....
Chocolate Fudge Caramel Cashew Cookies
Recipe adapted from That Skinny Chick Can Bake
6 tbs of flour
1/2 tsp of baking powder
1/4 tsp of salt
10 oz semi sweet chocolate chopped
2 oz unsweetened chocolate chopped
6tbs of butter
1/2 cups sugar
1 cup chopped salted cashews
1 package milk caramels (about 14 caramels)
2 tsp half and half
Pre heat oven to 325.
In a sauce pan melt butter, unsweetened chocolate and half of your semi sweet chocolate. Set aside.
In your electric stand mixer with the paddle attachment mix eggs and sugar together for 6 minutes on medium speed.
In a small bowl sift flour, baking powder, and salt together.
Mix chocolate/butter mixture into the eggs/sugar mixture on med/low speed for 30 seconds.
Remove bowl from mixer, and hand mix in your flour.
Then fold in the other half of your chocolate.
Fold in Cashews.
Drop in 1 tbs mounds on a parchment paper line cookie sheet bake for 10-12 minutes. Let the cookies cool for about 1 minute before transferring them to your cooling racks.
While they are cooling over low heat melt your caramels with your half and half. Mixing often.
Drizzle over cooled cookies.
Let set for about 5 minutes before enjoying!
You won't be able to eat just one. They are AMAZING!!!!!! And make sure to have a big cold glass of milk with them... you'll need it!
