Almond Raspberry Cookies


Are these not the perfect looking holiday cookie for you cookie swaps or Christmas gift baskets/tins?

These were a spur of the moment kind of cookie.

I needed Marzipan for a recipe I wanted to make this week... but I being me... and not reading the labels. I grabbed Almond Paste. Which is not quite the same as Marzipan.

I came across these cookies on foodgawker the other day and I knew I wanted to make something for the Holidays that looked similar.

Then I found myself with a box of almond paste....

So I googled almond paste cookies.... and I found these cookies.

I guess I was supposed to make some star cut out cookies!




Almond Raspberry Cookies
(Recipe from Odense)
Ingredients:
1-7 oz box almond paste
3/4 cup sugar
12 tablespoons room temp butter
1 large egg, room temperature
2 cups all purpose flour
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
raspberry jam (or other jam of choice)

Directions:
Grate Almond Paste with your cheese grater.

With your electric mixer beat Almond Paste, sugar and butter until well combined.

Add egg. Beat on high until light and fluffy.

Sift together the flour, cinnamon and nutmeg. Add to creamed ingredients, mixing until just combined.

Turn dough out onto floured surface divide in 2 form 5 inch disks, wrap in plastic and refrigerate atleast 15 minutes.

Roll out dough to the thickness of pie crust. Cut with a 2-3 inch circle cookie cuter.

With a star cookie cutter (or other shape of your choice) Cut out shapes in 1/2 of your circles.

Place solid circles on a parchment paper lined cookie sheet.

Spread 1/2 teaspoon of raspberry jam on the solid circles.

Top with cut out cookie circles and press edges gently together with the tips of a fork.

Bake for 10 to 12 minutes or until they are golden.

let them cool completely before eating.
