Quinoa Black Bean Salad Meatless Monday's Lunch....



I'm jumping on the Quinoa bandwagon... every blog I read has a new Quinoa this Quinoa that recipe....

SO I whipped up an easy light salad for lunch. I've eaten this every day for for the past 5 days. I love <3 it!
I did not expect my kids to eat it... though my youngest did! My oldest just picked all the black beans out.... (the boy loves beans!)

I have tried to get my husband to eat it..... "hippy food."

Some days I think if he can't put ketchup on it... he won't like it.... seriously.

The guy loves ketchup!

Even on his filet mignon!

I swear... he did it!

Anyways if you haven't tried any Quinoa recipes you really need to. It's chocked full of fiber, protein, and it's low cal! It has a very mild flavor so you can make it a sweet or savory dish.


Quinoa Black Bean Salad

Ingredients:

2 cups cooked quinoa ( I cook mine in veggie stock instead of water)
1 can of black beans drained and rinsed well
1/2 cup diced bell pepper
1 diced and seeded jalapeno pepper
1 clove minced garlic
1 tsp cumin
the juice of 2 limes
1tsp honey
2.5 tbs of evoo
Salt to taste
Garnish with fresh chopped cilantro

(other add in ideas.... avocado, cooked corn, red onion, tomatoes....)

To make your dressing whisk lime juice, honey, cumin, garlic and olive oil together. Set aside.

In a bowl mix quinoa, peppers, and beans together. Toss with Dressing.

Enjoy :)
