Cinnamon Chip Pecan Oatmeal Cookies (Whole Wheat)



I feel like every time I make a cookie I'm saying.... "this is my favorite new cookie recipe!"

My husband chowed these ones down as well... and he's a cookie critic. Normally my husband does not like nuts in his cookies, brownies,  and breads. Normally he likes a soft chewy cookie, or a cakey cookie and normally he says no way to whole wheat....

But not this time.... he loved this one.

This is a crunchy cookie (which is how I like them) the pecans get nice and toasted tasting and the cinnamon chips? No oatmeal cookie should be without them. They are perfect!

With the holidays nearing this would be a great one for your cookie swaps, gift baskets, or for your holiday parties.

Cinnamon Chip Pecan Oatmeal Cookies
(recipe yields 24 cookies)
Ingredients:
1 stick of room temp butter (1/2 cup)
1/2 cup light brown sugar
1/4 cup sugar
1 egg
1 tsp vanilla
3/4 cup white whole wheat flour
1/2 tsp cinnamon
1/2 tsp baking soda
1/4 tsp salt
1 1/4 cups old fashioned oats
5 oz cinnamon chips (half the bag... or about 3/4 a cup)
1/2  cup chopped pecans

Directions:
With an electric mixer cream butter and sugars together, add in egg and vanilla mix until it is combinded. In a separate bowl mix oats, flour, salt, cinnamon and baking soda together. Slowly add into your wet ingredients mixing on low/medium speed.

Add in chips and pecans.

Roll into 1 inch balls, place on a lined cookie sheet. Give each cookie ball a gentle pat (these cookies do not spread much).

Bake for 14 minutes or until cookies are golden.

Preheat oven to 350.



Enjoy it with a big cold glass of milk!

    Where do you get cinnamon chips? I don't know if it's me or my grocery store, but I can never find them anywhere!

  2. These look great! I've been on the lookout for the cinnamon chips for a month now and I still haven't found them!!! A friend gave me a scone recipe that I have been dying to try. I'm going to check the stores for them again today. Thanks for the reminder!!

  3. Thanks guys! Mary they JUST came out in my grocery store this week. I wish they sold them year round. Brittany they are normally in the baking section with the chocolate chips.... but it is seasonal so your stores may not be carrying them yet!
