I feel like every time I make a cookie I'm saying.... "this is my favorite new cookie recipe!"
My husband chowed these ones down as well... and he's a cookie critic. Normally my husband does not like nuts in his cookies, brownies, and breads. Normally he likes a soft chewy cookie, or a cakey cookie and normally he says no way to whole wheat....
But not this time.... he loved this one.
This is a crunchy cookie (which is how I like them) the pecans get nice and toasted tasting and the cinnamon chips? No oatmeal cookie should be without them. They are perfect!
With the holidays nearing this would be a great one for your cookie swaps, gift baskets, or for your holiday parties.

Cinnamon Chip Pecan Oatmeal Cookies
(recipe yields 24 cookies)
1 stick of room temp butter (1/2 cup)
1/2 cup light brown sugar
1/4 cup sugar
1 tsp vanilla
3/4 cup white whole wheat flour
1/2 tsp cinnamon
1/2 tsp baking soda
1/4 tsp salt
1 1/4 cups old fashioned oats
5 oz cinnamon chips (half the bag... or about 3/4 a cup)
1/2 cup chopped pecans
With an electric mixer cream butter and sugars together, add in egg and vanilla mix until it is combinded. In a separate bowl mix oats, flour, salt, cinnamon and baking soda together. Slowly add into your wet ingredients mixing on low/medium speed.
Add in chips and pecans.
Roll into 1 inch balls, place on a lined cookie sheet. Give each cookie ball a gentle pat (these cookies do not spread much).
Bake for 14 minutes or until cookies are golden.
Preheat oven to 350.
Enjoy it with a big cold glass of milk!
