Chocolate (Andes) Mint Chip Cookies My Best Christmas Cookie Recipe!


I've been bit by the holiday bug! I'm craving all things minty and chocolate. I normally only indulge in the minty/chocolate combo during the holidays. It is not my most favorite flavor combo.... with the exception of these cookies!!

My husband and my brother are big fans of Andes Mints. Seriously who likes an Andes Mint for your choice of candy?? The only time I might eat one is if I get it as an after dinner mint at the Olive Garden or something....

But man were they good in these cookies!!

Chocolate Mint Chip Cookies

Ingredients:

2 cups flour
2/3 cups cocoa powder
3/4 tsp baking soda
1/4 tsp salt
2 sticks (1 cup)  room temp butter
1 cup sugar
1/2 cup packed brown sugar
2 eggs
2 tsp vanilla extract
2 cups Andes Mint Chocolate Pieces


Directions:

Pre heat oven to 350.

Line baking sheet with parchment paper. Set aside.

Sift together in a medium bowl, flour, baking soda,salt, and cocoa. Set aside.

In your electric mixer cream butter and sugars together until fluffy. Add in eggs 1 at a time then your vanilla.

Slowly add in your flour mixture. When everything is incorporated

Remove from mixer and fold in your Andes mint pieces.

Drop in 1tbs balls on your cookie sheet. ( I use my 1tbs cookie scoop... if you don't have on you should get one!)

Bake for about 10 minutes.


Enjoy with a big glass of milk!

Hand Vibes Product Review

When I first started blogging I honestly didn't think I'd stick with it.  I never knew how  much fun it could be, the people, I would meet, and the opportunities it could and has presented along the way.

Because I'm still a newbie blogger.

I still get excited over days when I get 300-400 views on my website.

I get excited every time I get a new fan on facebook (nearing 300 yay).

I get excited if someone wants to feature one of MY recipes on their personal or company websites.

I get excited every time someone leaves a comment.

I love that I have "readers" who come back for more everyday!

And I especially get excited when I get contacted my companies to do product reviews.

Hand Vibes is a rubber like ring that sports trendy words like. "So they can keep their attitude at  their finger tips"

You can collect the or trade them, they come in two different sizes, and you can even wear them on your toes!

I received my package of Hand Vibes in the mail the other day and my kids were instantly interested in them... though not for wearing on their fingers! (lets keep in mind my kids are not old enough to read!)

Take a look at what they have been using their Hand Vibes for.....



At first I giggled a bit when I read the sayings. Thinking the idea was a bit silly. Do kids really say BOO-YAH these days? I'm probably out of touch with whats cool.

But I will say this... I thought back to when I was a 12 yr old girl and I know I probably sported rings like these. In fact I think I had a ring with that said Peace and Love...so I'm sure if Hand Vibes were around when I was in grade school I would have collected them all!



I'm cool right?

Yeah almost...

Even my 4yr old recognises that I'm a dork...."Mama your weired" He actually just said that to me!

  2. Those cookies sound great, though you could pretty much hand me a box of andes mints and tell me to go to town on them. My husband used to buy them for me every Christmas and put them in my stocking. Now, he knows better. They are too evil! I could easily eat the whole box in a sitting.

  3. I'm a mint/chocolate lover like your kids and husband. I think I could eat Andes mints for a meal, if I was allowed, so these cookies are right up my alley! (And I do love your picture and kid's comment. It's so what would've happened at my house.)

  6. Andes is the brand mint. They are basically just chocolate mints. Allot of restaurants will give you one after your meal as an after dinner mint. If they don't sell Andes Mints where you are from then you could substitute mint chocolate chips. OR use chocolate chips and substitute your vanilla for peppermint extract. You'll get the same minty chocolate cookie!

  7. i know those mints! we get em at the sushi restaurant (weird, right?)... i don't think we can actually buy em here though so maybe I'll try mint chocolate chips :) Thanks!
