Chocolate Beet Pound Cake....yes BEETs in CAKE



I'm sitting here trying to think of what to write to start of my post... and all I can think of are two things... First do Max and Ruby (ya know the rabbits on Nick Jr?) have parents? Do they live alone ? And why are they always calling Grandma? And I bet rabbits like beets right? Its a root veggie they like carrots.... why not beets.

It's rained up here in NH like everyday I swear for like a month.... lets just say I've had enough Max & Ruby... and Yo Gabba Gabba. And my boys new favorite movie...  Disney's Aristrocats.

Anyways... Beets.



Yes Beets.

In cake....



With chocolate....

= AWESOME.



I first saw this idea on The Pastry Affair... She made a beet chocolate cake. And I thought... bunt pan! with some sort of cream cheese icing. What a pretty cake that would be right?

Hers was so freaking cute though.... she even dusted a powdered sugar beet on it! Check out that link up above... she makes awesome stuff. Remember that S'more pie I made a while back... "SOME MORE of what?" well I got the idea from her. I love her site... so check it out.... now.

Don't get scared away... even if you aren't a fan of the beet I SWEAR you will like this cake. In fact you wouldn't know that sweetness that is so good in it is from a veggie. I PROMISE!

I was kinda hoping it kept its deep purple reddish color through the baking process but I guess it is best it didn't... it looks just like a regular chocolate pound cake...
So shhhh don't tell anyone about the beets.
It's nice and light not to rich, perfect amount of sweetness with a hint of cinnamon and tang from the icing... my new favorite cake!

Chocolate Beet Pound Cake

Ingredients:
1 cup butter or margarine, softened, divided
1 1/2 cups packed dark brown sugar
3 eggs
4 (1 ounce) squares semisweet chocolate or 1/2 cup chocolate chips
2 cups pureed cooked beets (about 1 bunch)
1/2 teaspoon vanilla extract
2 cups all-purpose flour
2 teaspoons baking soda
1/4 teaspoon salt
1 tsp cinnamon

Directions:

Pre heat oven to 375, butter and flour your bunt pan.

Melt 1/4 of a cup of butter with chocolate over low/ med heat. Set aside.

Cream butter and sugar together with electric mixer on medium till fluffy. Continue mixing on medium Add in eggs one at at a time, then add in beet puree then your melted chocolate/butter mixture.

In separate bowl sift together flour, baking soda and salt. Slowly add into wet ingredients.

When cake batter is Incorporated pour into prepared pan and bake for 45-50 minutes.

Remove from oven when tooth pick is inserted and comes out clean.



Let cool for 10 minutes then turn cake out onto plate or cooling rack to finish cooling before icing.


For your icing.....

This is a guesstimate... like always I wung it. (wung... is that a word?)

Ingredients:
4 oz room temp cream cheese
1/4 cup sour cream
1/2 cup powdered sugar
1/8-1/4 cup half and half

With your electric mixer on medium beat cheese and sour cream until fluffy. Slowly add in sugar. To thin your icing out add in your half and half 1 tbs at a time until it is thin enough to pour but thick enough that it won't drip off your cake entirely.

Then you pour it over the top of your cake...



Then you cut into to it and ENJOY!

  2. i've made a chocolate beet cake before, too! my husband hates beets, so it was a little experiment to see if he'd even notice 'em in there. he didn't + he loved it. ha! it's on the blog if you want to check it out. =)
