Today we are taking our little cupcake into my husbands work to show her off. This includes a trip to his office and one into the dealership show room.
I need any excuse to bake so why not!
This is something I kind of created on a whim with what I had in the cupboards and some lemons.

These are very girly little cakes.
Tutti Fruitti Cupcakes
2 1/2 cups flour
2 cups sugar
1tsp baking powder
1/2 tsp baking soda
1 1/3 cups buttermilk
1/2 cup butter (1stick)
1 tsp raspberry extract
The zest of one large lemon
4 egg whites
Add all dry ingredients lemon zest, extract, and butter into the bowl of your electric mixer. Mix for 30 seconds on low.
Add in buttermilk, beat on high for 2 minutes.
Add in egg whites beat for additional 2 minutes.
Add to cupcake liners (yields 24 cupcakes)
Bake for 20 minutes or until tooth pick is inserted in the middle and comes out clean.
Let them cool completely before frosting
Cream Cheese Frosting:
1 package of room temp cream cheese (8oz)
1 stick of room temp butter (1/2 cup)
1 tsp vanilla extract
4 cups of confectioners sugar
For this recipe I omitted the vanilla and added in raspberry extract instead.
Beat your butter cream cheese and extract together until its light and fluffy. Add in sugar 1 cup at a time beating on medium speed.
