I'm Pumpkin Crazed!! Cinnamon Swirl Pumpkin Pancakes

Another yukky rainy day inside, Maddie was napping, Owen was at school... So Chasey and I had a tea party with his T-Rex and giant elephant and ate some awesome pancakes for breakfast. This is the best pancake I've ever had... and I didn't even use maple syrup!
I've seen 2 posts recently with cinnamon swirls in their pancakes... what an easy way to fancy up your favorite pancake recipe... or mix.

Fake Ginger Cinnamon Roll Pancakes

Though I think my method needs a little tweaking the basic idea is there.....


Cinnamon Swirl Pumpkin Pancakes

Ingredients:

2 cups flour
2 cups whole milk
3 tbs butter milk powder
2 tbs baking powder
1 tbs baking soda
1/2 tsp salt
3/4 a cup of pumpkin puree
1/2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp ginger
1/4 tsp allspice
1/2 tsp vanilla
1/2 tsp apple cider vinegar
3 tbs dark brown sugar

For the Swirl:
6 tbs butter
1/2 cup brown sugar
1 tbs cinnamon

Directions

Microwave butter brown sugar and cinnamon for about 40-50 seconds... just till but is melted.

Whisk and place into a ziplock bag... let it cool just enough so its piping consistency.

In the mean time....

In a medium mixing bowl whisk milk, pumpkin, vinegar, vanilla and sugar together.

In separate bowl sift flour, baking soda, baking powder, and spices. Whisk into wet ingredients.

On a hot oiled griddle or non stick fry pan scoop batter (you pick your pancake size).

Snip the tip off your ziplock bag and pipe a swirl on top of your pancake as its cooking.



As the pancake bubbles around the edges its time to flip it.

When your pancake is done... remove it from the pan carefully... I lost my cinnamon swirl look because of my spatula. You can always flip it out to avoid scraping your swirl off the way I did...




Enjoy it topped with butter of course... add some maple syrup if you'd like. We just did a cinnamon sugar dusting over our buttered pancakes. SO GOOD.

  4. Thanks Tiffany! And Pam to answer your question butter milk powder can be found in (most) grocery stores. I've seen it in the baking isle with the powdered and canned milk products. It can be used as a buttermilk substitute when water is added. Here it gives the pancake that nice buttermilk tang by just adding the powder. I like to use it my pie crusts and biscuits. It is optional in this recipe... if you cant find it just make the pancakes without!
