Easy Pantry Corn Chowder

Do you keep evaporated milk in your pantries or cupboards in case of an emergency....?

Lets say an emergency like running out of milk when your 2yr old decides to dump a entire gallon out on the kitchen floor then proceed to splash in it?

Well I do.

And that's the emergency I had today that called for evaporated milk.

Pantry Corn Chowder

1 can of evaporated milk
1 can of creamed corn
1 can of corn
1 cup diced ham
1 potato cubed
1/4 cup sour cream
1/4 cup diced onion
1 clove garlic minced
salt and pepper to taste

In a medium to large sauce pan over medium/low heat, add in all of your ingredients and simmer mixing ever few minutes until potatoes are fork soft.

This is by far the quickest easies chowder recipe I've made... funny part is my husband who normally hates chowder and hates ham... loved this soup he said it like 3 times while eating it along side a buttery slice of corn bread.

You can tell I was a bit lazy with my quick cooking chowder and didn't even take the time to take any good pictures tonight......
