Crock Pot Roasted Chicken and Veggies



For anyone who knows me... you probably know I detest most crock pot recipes. I feel like I'm cheating and that I'm not really cooking it.... the whole 'set it and forget it' saying irks me. I like to watch my food, I like to taste it as its cooking so I can season it just right... BUT sometimes we need to take the easy way out!

My husband usually complains about most things I do make in my crock pot... like pot roasts and things.... He hates it when your meat turns to mush and your veggies all taste the same.

I'm hoping this chicken recipe will change both our minds on crock pots... because now that I have a new baby in addition to the boys... I'm short on time when it comes to dinners!

I saw a similar recipe on a blog somewhere... though now that I'm looking for it I can't find it! (will post it later if I find it)

Crock Pot Roasted Chicken and Veggies

Ingredients:
1 whole chicken cut into pieces ( I buy mine this way... but you can always do it yourself)
2 potatoes quarted
3 carrots roughly chopped
1 onion quartered
1 stick of room temp butter
5 cloves minced garlic
1 tsp soy sauce
1 tbs worchestire sauce
1 tsp salt
1 tsp thyme leaves
1 tsp balsamic vinegar

Sauce Ingredients:
Chicken drippings
1 tbs balsamic vineger
1tsp honey
1tbs cornstarch
Directions:

Place your veggies in the bottom of your crock pot.

Place chicken pieces in on top of veggies.

In a small bowl mix butter, thyme, salt, and garlic together.

Drizzle vinegar, soy and worchestire sauces over chicken. Then smear butter mixture over chicken pieces.



Cover and cook on low for 5-6 hours.



Transfer everything into a oven safe baking dish and and place under the broiler to crisp up your chicken skin and veggies watch it carefully so nothing burns!

Remove chicken from pan and place on serving dishes. Pour juices from pan and crock pot through strainer.
Mix together in a sauce pan (skim as much fat off top as you can).

Add 1 tbs of balsamic vinegar, and 1 tsp of honey. Bring to a boil.


Add in 1 tbs of cornstarch whisking vigorously making sure no lumps are left. Bring up to a boil once more and remove from heat. Once its thickened drizzle over chicken and veggies.
