I'm on a bacon kick this week... first it was bean and bacon soup... found here...Best soup you'll ever eat! Now I'm making these biscuits... and I think this mornings breakfast might include a bacon filled pancake or bacon stuffed french toast. Can't decide yet.
These biscuits are so good, I can't wait to make them again with some extra add ins like garlic or scallions. Maybe even some apples? Apples go awesome with sharp cheddar... and bacon.
I made a Chicken and Ale Stew with my left over chicken from the other nights Best and easiest chicken recipe! to go along with these, between the stew and the biscuits I had the perfect meal for a cold rainy day. We are all sick in our house this week... all I want when I'm sick is chicken soup! Stay tuned for the post later today or tomorrow for my Chicken and Ale Stew.
But for now... make these biscuits!
Bacon Beer Biscuits
2 cups flour
3 tsp baking powder
1/2 tsp salt
2 tbs cold unsalted butter
2 tbs bacon grease
1 cup crumbled cooked crispy bacon
3/4 a cup of your favorite beer (I used a Tuckerman's Pale Ale)
shredded sharp cheddar (for topping)
Pre heat oven to 375
In a medium mixing bowl sift flour, baking powder and salt together. With a pastry blender working in butter and bacon grease until crumbly. Add in beer... get in there with your clean cooking hands and work into a dough. Careful not to kneed or work it too much or your biscuits will be hockey pucks! Add in bacon kneed till it's fully incorporated.
Roll out about 1/2 an inch thick. And with a biscuit cutter... or a canning jar if your biscuit cutter is MIA... (where my things disappear to is beyond me!) cut out circles.
Place on lined cookie sheet top each with shredded cheese and bake for 15-17 minutes.
Enjoy with a nice hot bowl of stew!
Or chili, or eggs, or gravy... I like stew but do whatever YOU want. Or eat them on their own...
