Apple Rice Pudding Brulee


I have never ever had rice pudding before... the idea always just seemed... strange to me.

But I figured hey I love bread pudding it's just another form of starch right?

Man I've been missing out! And if you haven't had it yet... trust me your missing out.... so make this.... today....ok?

Apple Rice Pudding Brulee

Ingredients:
1 cup quick cooking white rice ( I use the lazy mom rice... 5 Minute Rice)
1 cup cider ( I used hard cider... cause I'm a bit of a fan of the Woodchuck!)
2 cups half and half
1 apple peeled and chopped
1/4 cup brown sugar
1/4 cup walnuts
1/2 tsp cinnamon
1/8 tsp nutmeg
1/8 tsp ginger
1/4 tsp vanilla

Directions:

In a medium sauce pan take your cider and bring to a boil. Add in rice, remove from heat cover and let it stand for 5 minutes.

Stir in half and half and sugar. Bring to a boil; add in apples, nuts, vanilla and spices.

Reduce heat to low and continuously stir until rice starts to break down and the apple are soft.  If it gets to thick you can add in more half and half or cider.

Transfer pudding into oven safe serving dishes small ramekins work great.



Sprinkle 1 tsp sugar over each dish.  Place each one under a pre heated broiler for about 1-2 minutes until sugar starts to turn golden and bubble. If you have a kitchen torch go ahead and use that!
