Sea Salted Maple Caramel Popcorn... My Irene Survival Food
This MAY be my last post till after my cupcake is born! I'm officially over due... YUK! BUT with the hurricane coming maybe she'll decided to finish up in there?
They do say major changes in the barometric pressure can bring on labor!
With Hurricane Irene bracing upon us... I was thinking of snacks and treats we might enjoy when the lights go out...
I'm assuming we will be without electricity for at least a couple of days.
Ollie is all ready hunkered down ready to ride out the storm in my spot on the couch with my blanket....
Sea Salted Maple Caramel Corn
1/2 cup un popped popping corn
1 1/2 cups brown sugar ( I used dark.. but if I do it again I will probably try light)
1 stick of unsalted butter
1/3 cup pure maple syrup (if you don't have it try corn syrup instead... or honey)
1/4 tsp vanilla
1/2 tsp baking soda
1 tsp sea salt
Preheat oven to 300.
Pop your popcorn according to package directions.
Set aside in a very large mixing bowl or pan.
In a medium sauce pan, take butter, brown sugar and maple syrup and melt.
Bring to a boil over medium heat. Let boil for 5 minutes stirring occasionally.
Remove from heat add in vanilla and baking soda. This is the fun part its like a science experiment. It gets foamy and lightens.
Very quickly with a rubber spatula pour caramel into popcorn stirring and covering all the corn.
Spread out onto 2 parchment paper lined cookie sheets.
Sprinkle with sea salt.
Bake for 30 minutes stirring about every 10 minutes.
Break it up and let it cool... then pig out!
Or eat it in moderation... like you should but I won't be!
