So every time I make a post I think this will be the last time I publish one for awhile... well because you'd think I'd have had the baby by now right?
Well think again... she is nice and cozy in there!! It is a shame too because not only are we having wonderful early fall weather... I'm baking with apples, cinnamon, and maple.
Whats better than that??
As summer goes out we all have zucchini laying around and too much of it... and as fall comes in we all love some fresh orchard picked apples.
So lets pair the two and celebrate the end of August!
You really must try these now while both zucchini and apples are fresh.
Maple Apple Zucchini Muffins
2 ½ cups flour
1/4 cup light brown sugar
1/4 cup dark brown sugar
¼ cup sugar
1 tbs baking powder
1/4 tsp allspice
1/2 tsp nutmeg
¼ tsp salt
2 lightly beaten eggs,
½ cup maple syrup
½ cup browned butter
1/2 tsp vanilla
1 cup peeled diced apple
1 cup shredded zucchini
Preheat oven to 350
In a medium mixing bowl sift together, flour, baking powder, cinnamon, allspice, nutmeg, salt.
Set that aside and start browning your butter.
To do this take you butter in a stainless steel or an enamel pan melt ( I don't recommend a black bottom pan because it will be hard to judge the color of the butter in them) on med/low till its bubbly on top and golden brown underneath. It should smell kind of nutty.
Set this aside to cool just a bit.
In separate bowl add in all 3 types of sugar, maple syrup and mix.
Mix in browned butter.
Mix in eggs.
Mix in zucchini.
Mix together with dry ingredients.
Fold in apples.
Fill 6 jumbo muffin cups and bake for 30-35 minutes.
Everything tastes better with a big glob of melting butter! NOT that these muffins needed it... plenty yummy on their own (and high enough in calories!)
Hey at least it has some veggies and fruit in each bite...
