Lemon Dill Three Bean Salad


After my muffin binge this morning I opted for something a tad healthier for lunch...

With Labor day coming up and BBQ's galore. I'm sure we will all have our fill of mayo filled salads. Don't get me wrong. I love them as well. But here is an idea you can make very quickly, cheep, and guess what its healthy!

My kids love beans...  They love chick peas and black beans the most... just straight out of the can and rinsed.

I normally make a chick pea salad that has carrots, bell peppers, amongst other things in it but they are always picking the beans out and leave the rest. So this recipe is for my kids.

Nothing but beans boys!




Lemon Dill 3 Bean Salad

Ingredients:
1 can of chick peas (garbanzo beans) rinsed
1 can of black beans rinsed
1 cup fresh green beans ends removed and chopped into 1/2-3/4 in pieces
1 lemon juiced
1 tbs fresh dill weed
1 clove minced garlic
3 tbs EVOO
1/2 tsp honey


Directions:
In a small bowl whisk lemon, dill, garlic, EVOO, and  honey together.

In a medium bowl mix beans with your lemon dill dressing.


Easy peasy... your done.

  2. Funny I actually got them a couple weeks ago when I went looking for those rocket pop molds at Home Goods... didn't find them but scored some awesome plates!
